%20Cream%20%E2%80%93%20Burwell%20General%20Store%20Swap%3C/p%3E%3Cp%3EIt%E2%80%99s%20Burwell%20Recipe%20Swap%20time%20again%20%E2%80%93%20check%20out%20my%20past%20swaps%20for%20more%20info%20about%20the%20group.%3C/p%3E%3Cp%3ESo%E2%80%A6%20%20I%20had%20plans%20to%20make%20something%20that%20would%20blow%20my%20mind.%20%20Something%20I%20learned%20from%20Alton%20Brown,%20who%E2%80%99s%20tied%20as%20my%20favorite%20brain%20crush%20with%20Brian%20Lehrer%20(all%20you%20WNYCers%20know%20what%20I%E2%80%99m%20talking%20about).%20%20Something%20that%20I%20figured%20I%20could%20mix%20and%20measure%20and%20adapt%20as%20necessary.%20%20I%20even%20wrote%20the%20post%20out%20last%20night.%20%20It%20was%20brilliantly%20witty.%20%20Pinky%20swear%20it%20was.%3C/p%3E%3Cp%3EAnd%20while%20the%20experiment%20worked%20up%20to%20this%20point%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6%20that%20beaker%20of%20coolness%20was%20as%20far%20as%20I%20got.%20%20They%20were%20to%20be%20these%20beautiful%20pearls%20of%20dark%20red%20wine%20that%20I%20had%20simmered%20with%20some%20really%20potent%20dried%20ginger,%20honey%20and%20gelatin%20sheets.%20%20Dropped%20into%20chilled%20oil,%20they%20were%20to%20separate%20easily%20when%20rinsed%20clean.%3C/p%3E%3Cp%3EI%20tried%20several%20variations%20%E2%80%93%20still%20think%20I%20need%20more%20gelatin.%3C/p%3E%3Cp%3ESo,%20in%20a%20pinch%20%E2%80%93%20what%20could%20I%20make?!?!%20%20Because%20the%20recipe%20we%20were%20given,%20the%20one%20that%20we%20were%20to%20try%20to%20keep%20close%20to,%20was%20this:%3C/p%3E%3Cp%3EHonestly,%20reading%20it%20invoked%20a%20reaction%20of%20reverse%20peristalsis%20in%20me%20(probably%20the%20only%20phrase%20I%20remember%20from%20high%20school%20biology).%20%20Look%20at%20that%20ingredients%20list:%20really?%3C/p%3E%3Cp%3ESo%20what%20I%20took%20from%20it%20was:%20fruit,%20gelatin,%20ginger.%20%20My%20original%20idea%20for%20the%20swap%20was%20to%20be%20a%20take%20on%20Charlotte%20Russe,%20which%20I%E2%80%99ve%20been%20wanting%20to%20adapt%20since%20I%20read%20A%20Tree%20Grows%20in%20Brooklyn%20again%20a%20few%20months%20ago.%20%20But%20for%20the%20same%20reason%20that%20this%20recipe%20makes%20me%20gag,%20I%20couldn%E2%80%99t%20do%20it.%3C/p%3E%3Cp%3ESo%20the%20result%20was%20a%20relatively%20healthy,%20bi-blueberry%20dessert%20served%20with%20a%20gluten-free%20lady-finger.%20%20I%20did%20not%20make%20them.%20%20If%20you%20want%20to%20make%20your%20own,%20I%20suggest%20this%20recipe%20from%20Krissy%E2%80%99s%20Creations.%3C/p%3E%3Cp%3EThis%20is%20definitely%20not%20my%20most%20proud%20swap.%20%20But%20as%20this%20post%20goes%20up%20I%E2%80%99m%20not%20even%20near%20NYC%20at%20all,%20but%20on%20an%20island%20off%20of%20Portugal%20touring%20a%20vineyard,%20cooking%20food%20in%20the%20ground,%20interviewing%20chefs%20and%20chasing%20dishes%20around%20the%20island%20while%20my%20recorder%20runs%20and%20my%20photographer%20clicks%20away.%20%20In%20prep%20for%20the%20trip%20I%E2%80%99ve%20been%20working%20like%20mad%20to%20meet%20deadlines.%20%20And%20as%20I%20gobbled%20this%20up,%20I%20realized%20sometimes%20even%20last-minute%20creations%20come%20together%20when%20you%20need%20them.%3C/p%3E%3Cp%3ENow%20please%20go%20check%20out%20my%20fellow%20swappers%20for,%20I%E2%80%99m%20sure,%20a%20tasty%20combo%20of%20creations!%3C/p%3E%3Cp%3EBlueberries%20and%20Cream%3C/p%3E%3Cp%3EServes%208%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3ERinse%20and%20separate%20the%20blueberries,%20and%20reserve%201/2%20cup.%20%20Put%20in%20a%20small%20pot%20on%20medium%20heat%20with%20the%20wine%20and%20dried%20ginger.%20%20Bring%20to%20a%20boil%20and%20cook%20for%20about%2010%20minutes,%20crushing%20some%20of%20the%20blueberries%20with%20a%20fork.%20%20Meanwhile,%20bloom%20the%20gelatin.%20%20Whisk%20in%20slowly,%20and%20cook%20for%20another%205%20minutes.%3C/p%3E%3Cp%3ETurn%20off%20heat,%20and%20remove%201/4%20cup%20blueberry%20liquid.%20%20Add%20remaining%201/2%20cup%20blueberries%20to%20pot,%20and%20stir%20in%20%E2%80%93%20these%20will%20soften%20a%20tad%20but%20give%20the%20jam%20a%20nice%20texture.%3C/p%3E%3Cp%3ERemove%20the%20pot%20to%20refrigerator%20until%20chilled.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20the%20cream%20cheese,%20powdered%20sugar%20and%201/4%20cup%20blueberry%20liquid.%20%20Stir%20until%20completely%20incorporated.%20%20Return%20to%20fridge%20to%20chill%20until%20firm.%3C/p%3E%3Cp%3EWhen%20ready%20to%20serve,%20scoop%20the%20cream%20cheese%20mixture%20into%20a%20small%20ziploc%20bag.%20%20Snip%20the%20corner,%20and%20pipe%20onto%20the%20flat%20side%20of%20one%20cookie.%20%20Sandwich%20with%20another%20cookie.%20%20Spoon%20about%20a%20tablespoon%20of%20chilled%20jam%20onto%20plate,%20then%20rest%20cookie%20sandwich%20on%20top.%20%20Garnish%20with%20candied%20ginger.%3C/p%3E){kind=link}
