.%20At%20over%20200%20pages,%20the%20book%20has%20a%20lot%20of%20recipes%20to%20choose%20from,%20especially%20in%20the%20dessert%20department.%20If%20it%20had%20been%20fall%20or%20winter%20I%20have%20no%20doubt%20I%20would%20have%20chosen%20a%20sweet%20bread%20or%20cookie,%20but%20because%20it%20is%20summer%20I%20instead%20went%20looking%20through%20the%20berry%20recipes.%3C/p%3E%3Cp%3ESo%20about%20this%20actual%20dessert.%20In%20the%20cookbook%20it%20was%20made%20with%20raspberries%20(I%E2%80%99m%20not%20a%20fan)%20and%20only%20suggested%20serving%20with%20whipped%20cream.%20It%20was%20called%20simply%20%E2%80%9CRaspberry%20Delight%E2%80%9D%E2%80%93a%20very%20old%20fashioned%20name%20for%20a%20dessert%20but%20I%20decided%20to%20keep%20it%20in%20deference%20to%20Evelyn%20Swanson,%20the%20author%20of%20the%20recipe.%20I%20had%20no%20idea%20what%20to%20expect%20when%20I%20made%20this.%20And%20would%20it%20be%20considered%20a%20meringue?%20With%20only%2020%20minutes%20in%20the%20oven,%20it%20comes%20out%20still%20soft%20and%20jiggly,%20but%20firms%20up%20while%20it%20cools.%20For%20me,%20the%20recipe%20as%20written%20would%20be%20too%20sweet%20and%20needed%20a%20jolt.%20So%20I%20added%20lemon%20juice%20to%20the%20blueberries%20and%20lemon%20curd%20to%20the%20whipped%20cream.%20That%20put%20this%20recipe%20over%20the%20top.%20Everyone%20in%20my%20family%20adored%20it.%3C/p%3E%3Cp%3EAs%20a%20reader%20of%20blogs,%20I%20often%20get%20annoyed%20by%20my%20own%20slouchy,%20ugly%20creations%20when%20the%20blog%20I%20am%20looking%20at%20has%20some%20beautiful%20composed%20dish.%20So%20let%20me%20just%20be%20upfront%20and%20say%20the%20only%20way%20you%20will%20get%20this%20dessert%20to%20look%20like%20my%20pictures%20is%20to%20use%20something%20like%20a%20biscuit%20cutter%20or%20glass%E2%80%93and%20it%20will%20create%20scraps%20(that%20your%20husband%20will%20happily%20eat).%20I%20did%20it%20once%20for%20the%20pictures%E2%80%93but%20otherwise%20we%20ate%20slouchy,%20sloppy,%20delicious%20sliced%20yet%20uneven%20squares!%3C/p%3E%3Cp%3EBlueberry%20Delight%20with%20Lemon%20Cream%3C/p%3E%3Cp%3ERecipe%20type:%20Dessert%3C/p%3E%3Cp%3EFor%20meringue:%201%20cup%20sugar%20%C2%BC%20cup%20water%20%C2%BC%20cup%20fresh%20lemon%20juice%20%C2%BC%20cup%20cornstarch%2010%20oz%20blueberries%20(frozen%20or%20fresh)%204%20egg%20whites%20For%20crust:%201%C2%BD%20cups%20(189%20g)%20AP%20flour%20%C2%BC%20t%20fine%20sea%20salt%20%C2%BE%20cup%20butter%203%20T%20sugar%20For%20lemon%20cream:%202%20cups%20heavy%20whipping%20cream%203%20T%20powdered%20sugar,%20to%20taste%20%C2%BE%20cup%20lemon%20curd%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350%20F.%20First%20begin%20the%20meringue%20filling,%20as%20it%20will%20need%20to%20cool:%20Whisk%20together%20the%20sugar,%20water,%20lemon%20juice%20and%20cornstarch%20in%20a%20small%20saucepan.%20Place%20on%20medium%20heat%20and%20add%20the%20blueberries.%20Whisk%20until%20thickened.%20Pour%20into%20a%20large%20bowl%20and%20set%20aside%20to%20cool.%20While%20it%20is%20cooling,%20make%20the%20crust:%20whisk%20together%20the%20flour%20and%20salt%20and%20set%20aside.%20Beat%20the%20butter%20until%20creamy.%20Scrape%20the%20sides%20and%20bottom%20of%20the%20bowl%20and%20add%20the%20sugar.%20Beat%20until%20fluffy.%20Mix%20in%20the%20flour%20in%202%20additions.%20The%20mixture%20will%20be%20quite%20crumbly.%20Line%20a%209X13%20pan%20with%20parchment%20paper.%20Dump%20the%20crust%20crumbs%20out%20into%20the%20pan,%20and%20press%20the%20crumbs%20evenly%20into%20a%20firm%20crust.%20Bake%20for%2020%20minutes.%20While%20it%20is%20baking,%20whip%20the%20egg%20whites%20until%20stiff%20but%20not%20dry.%20Fold%20them%20into%20the%20cooled%20blueberry%20mixture%20(mine%20was%20a%20little%20warm)--do%20your%20best%20to%20not%20deflate%20the%20egg%20whites,%20but%20mix%20completely%20until%20no%20streaks%20remain.%20Pour%20onto%20the%20crust%20and%20smooth%20the%20top%20even.%20Return%20to%20the%20oven%20to%20bake%20for%20another%2020%20minutes,%20until%20delicately%20browned%20but%20still%20a%20little%20jiggly.%20Set%20aside%20to%20cool.%20Before%20serving,%20whip%20the%20heavy%20cream%20until%20thickened.%20Add%203%20tablespoons%20of%20powdered%20sugar%20and%20beat%20some%20more.%20Taste%20the%20cream--it%20should%20be%20a%20little%20sweet,%20but%20not%20a%20lot%20because%20you%20are%20still%20adding%20lemon%20curd.%20If%20you%20think%20you%20want%20it%20sweeter,%20add%20more%20powdered%20sugar%20now.%20Beat%20until%20almost%20whipped%20and%20then%20add%20the%20lemon%20curd.%20Beat%20until%20thick.%20Serve%20the%20lemon%20curd%20whipped%20cream%20on%20top%20of%20the%20individual%20slices%20of%20the%20Blueberry%20Delight.%20%203.2.2708%3C/p%3E%3Cp%3EAmazon%20affiliate%20links%20were%20used%20in%20this%20post,%20but%20only%20to%20link%20to%20items%20I%20would%20be%20discussing%20and%20linking%20to%20anyway.%3C/p%3E%3Cp%3Ecommunity%20cookbook,%3C/p%3E%3Cp%3Edessert,%3C/p%3E%3Cp%3Elemon,%3C/p%3E%3Cp%3Emeringue,%3C/p%3E%3Cp%3Es
