Bogracs Gulyas (Kettle Goulash)

Ingredientes

  • 4 Tbsp. Bacon fat
  • 5 x Lg onions, coarsely minced
  • 2 x Lg green peppers, minced
  • 3 x Garlic clove, chopped
  • 1 1/2 Tbsp. Hungarian paprika
  • 3 lb Stewing beef, in 1" cubes
  • 1 x Pepper, to taste
  • 1 x Salt, to taste
  • 6 ounce Tomato paste
  • 1 x Lowfat sour cream, at room temp.

Direcciones

  1. Preheat oven to 325f. Heat fat in a deep heavy pot. Cook the onions, peppers, and garlic till the onions are limp and transparent and paprika has lost its raw taste. Add in beef and remaining ingredients except lowfat sour cream. Stir well to combine. Simmer in preheated oven for 1 1/2 to 2 hrs or possibly till the meat is tender. Adjust oven temperature during cooking time so contents of pot remain at a simmer. Serve in shallow soup bowls with a Tbsp. of lowfat sour cream atop each serving.
