Boiled Raisin Cake (Jesus Cake)

Ingredientes

  • 1 c. raisins
  • 1 1/2 c. water
  • 1 c. sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 egg
  • 1/2 c. shortening
  • 1 1/2 c. sifted all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon cloves

  1. Grease 8 inch square pan. Preheat oven to 350 degrees. Put together raisins, shortening and 1 cup water. Heat to boiling point, reduce heat and simmer covered for 5 min. Let cool to room temperature. Sift dry ingredients together.Beat egg in a medium size bowl, beat in remaining 1/2 cup water and cooled raisins liquid. Fold in dry ingredients gradually. Beat till smooth. Stir in cooled raisin mix. Pour batter into prepared pan and bake 35-40 min. (This can be doubled and bake in jelly roll pan for bars.) Frost with powdered sugar frosting.
