- Mix zucchini and onion and put in pan with 1/2 c. water, salt and pepper to taste. Cook till soft. Drain and mash. Cook again till all liquid is gone. Add in 1 Tbsp. butter and 3/4 c. Velveeta cheese. Cook long sufficient to heat the cheese. Mix well.
