%20on%20the%20beautiful%20island%20of%20Madeira.%20%20After%20the%20first%20day%20of%20rain%20and%20mist,%20the%20sun%20shone%20and%20we%20really%20enjoyed%20the%20island%20and,%20of%20course,%20the%20food.%20%20As%20it%20is%20an%20island%20there%20was%20a%20lot%20of%20fish%20which%20we%20love,%20but%20today%20I%20am%20sharing%20with%20you%20a%20recipe%20for%20the%20local%20bread,%20Bola%20de%20Caco.%20%20We%20were%20served%20this%20little%20round%20loaf%20as%20garlic%20bread%20on%20several%20occasions,%20but%20I%20also%20saw%20it%20sold%20from%20a%20stall%20as%20a%20sandwich%20snack.%3C/p%3E%3Cp%3EBola%20de%20Caco%20Garlic%20Bread%20served%20with%20fresh%20cheese%20and%20olives,%20eaten%20in%20a%20restaurant%20overlooking%20the%20Marina%20at%20Funchal.%3C/p%3E%3Cp%3EOn%20our%20return,%20I%20did%20a%20little%20research%20and%20found%20that%20one%20of%20the%20ingredients%20in%20Bola%20de%20Caco%20is%20sweet%20potato,%20although%20I%20think%20their%20sweet%20potato%20must%20be%20less%20orange%20as%20the%20bread%20was%20not%20as%20coloured%20as%20mine.%20%20Some%20recipes%20suggested%20a%20sour%20dough,%20but%20I%20didn't%20have%20time%20to%20wait,%20so%20my%20version%20is%20a%20fast%20action%20yeast%20version.%20%20I%20have%20kept%20faithful%20to%20the%20method%20of%20baking%20which%20is%20in%20a%20pan,%20so%20it's%20a%20bit%20like%20a%20cross%20between%20a%20tattie%20scone%20and%20a%20giant%20English%20Muffin.%3C/p%3E%3Cp%3EBola%20de%20Caco%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EBake%20the%20sweet%20potatoes,%20either%20in%20the%20oven%20for%20about%2030-40%20minutes%20or%20in%20the%20microwave%20for%208-10%20minutes%20(timings%20depend%20on%20size%20of%20sweet%20potatoes).%20Once%20cooked%20until%20soft,%20scoop%20out%20the%20flesh%20and%20mash%20until%20smooth.%3C/p%3E%3Cp%3ECombine%20the%20sweet%20potatoes%20with%20the%20other%20ingredients%20and%20enough%20warm%20water%20to%20make%20a%20very%20soft,%20wet%20dough.%20Using%20one%20hand,%20bring%20all%20the%20ingredients%20together%20and%20mix%20thoroughly%20for%205-10%20minutes%20or%20until%20dough%20becomes%20elastic.%3C/p%3E%3Cp%3ECover%20dough%20loosely%20with%20cling%20film%20and%20leave%20in%20a%20warm%20place%20for%2030%20minutes.%3C/p%3E%3Cp%3EDivide%20the%20mixture%20into%204%20equal%20portions.%20Oil%20your%20hands,%20so%20they%20don't%20stick%20to%20the%20dough,%20shape%20into%20flattened%20rounds%20and%20set%20aside%20to%20prove%20for%20another%2030%20minutes,%20covered%20with%20a%20damp%20towel.%3C/p%3E%3Cp%3EMelt%20a%20little%20butter%20in%20a%20small,%20high%20sided%20pan%20(or%20whatever%20kind%20of%20pan%20you%20have)%20and%20cook%20each%20round%20over%20a%20low%20heat%20for%208-10%20minutes%20on%20each%20side%20until%20browned%20and%20cooked%20through.%3C/p%3E%3Cp%3ERepeat%20process%20with%20remaining%20bread,%20keeping%20the%20cooked%20Bola%20soft%20by%20covering%20with%20a%20clean%20tea%20towel%20on%20a%20cooling%20rack.%3C/p%3E%3Cp%3E1.%20baking%20the%20Bola%20de%20Caco%20in%20the%20pan%20(a%20smaller%20high%20sided%20pan%20is%20recommended%20but%20I%20don't%20have%20one)%3C/p%3E%3Cp%3E2.%20The%20dough%20on%20it's%20second%20rise%3C/p%3E%3Cp%3E3.%20Texture%20of%20the%20bread%20which%20is%20slightly%20chewy%20on%20the%20outside%20but%20soft%20and%20light%20inside.%3C/p%3E%3Cp%3E4.%20The%20bread%20rounds%20cooling.%3C/p%3E%3Cp%3EI%20was%20surprised%20how%20easy%20it%20was%20to%20make%20the%20Bola%20de%20Caco%20and%20pleased%20that%20they%20cooked%20all%20the%20way%20through.%20%20As%20you%20can%20see%20above,%20this%20little%20bread%20also%20makes%20a%20great%20bacon%20butty!%3C/p%3E%3Cp%3EI'm%20entering%20the%20Bola%20de%20Caco%20for%20the%20new%20Bread%20based%20linky%20%22Bready%20Steady%20Go%22%20the%20brainchild%20of%20Jen%20from%20Jen's%20Food%20and%20Michelle%20from%20Utterly%20Scrummy%20Food%20for%20Families%3C/p%3E){kind=link}
