%20pound%20cake-like%20bread.%20Fruitcake!%20Yuk.%20I%20call%20them%20doorstops.%20I%20am%20a%20believer%20in%20the%20theory%20that%20there%20is%20actually%20only%20one%20actual%20fruitcake%20and%20it%20is%20re-gifted%20over%20and%20over%20and%20over%20again,%20year%20after%20year.%20But,%20I%20could%20be%20wrong.%3C/p%3E%3Cp%3EThe%20earliest%20recipe%20from%20ancient%20Rome%20lists%20pomegranate%3C/p%3E%3Cp%3Eseeds,%20pine%20nuts%20and%20raisins,%20mixed%20into%20barley%20mash.%20In%20the%20Middle%3C/p%3E%3Cp%3EAges,%20honey,%20spices,%20and%20preserved%20fruits%20were%20added%20and%20the%20name%20fruitcake%20was%20first%20used.%3C/p%3E%3Cp%3EI%20was%20turned%20off%20even%20by%20the%20thought%20of%20fruitcake,%20that%20is%20until%20a%20few%20years%20ago,%20when%20my%20friend%20and%20muse,%20Elaine,%20the%20original%20Gourmet%20Girl,%20shared%20with%20me%20the%20most%20amazing,%20traditional%20Caribbean%20fruitcake%20recipe%20from%20her%20Aruban%20mom.%20While%20I%20was%20skeptical%20at%20first,%20after%20watching%20bottle%20after%20bottle%20of%3C/p%3E%3Cp%3Eliquor%20added%20over%20a%20months%20time,%20I%20started%20to%20think,%20%22Ok,%20this%20one%20may%20be%20different.%22%20This%20is%20Elaine's%20version%20and%20she%20calls%20it%20%22Black%20Cake%22%20and%20folks,%20it%20is%20truly%20amazing.%20Delicious,%20moist%20and%20unlike%20any%20traditional%20fruitcake%20I%20had%20ever%20tasted.%20But%20beware,%20unless%20you%20have%20a%20strong%20constitution,%20more%20than%20one%20piece%20will%20leave%20you%20a%20bit%20tipsy!%3C/p%3E%3Cp%3EFor%20those%20that%20do%20not%20like%20fruitcake,%20this%20recipe%20is%20such%20a%20completely%3C/p%3E%3Cp%3Eopposite%20version%20of%20what%20the%20term%20fruitcake%20conjures%20up%20in%20our%20mind.%3C/p%3E%3Cp%3EMoist,%20delicious,%20with%20marinated%20fruit%20that%20is%20soft,%20chewy%20and%20definitely%20not%20candied%20hard%20little%20bits%20of%20yuk.%20And,%20with%20all%20that%20liquor,%20this%20is%20definitely%20NOT%20a%20version%20to%20share%3C/p%3E%3Cp%3Ewith%20the%20kids.%20Unless%20of%20course%20you'd%20like%20a%20little%20piece%20and%20quiet.%3C/p%3E%3Cp%3EOne%20piece%20ought%20to%20have%20even%20the%20most%20active%20child%20sleeping%20like%20a%20baby%20within%20the%20hour.%20(Okay%3C/p%3E%3Cp%3Eyou%20crazies,%20I%20see%20you%20sitting%20there%20thinking%20about%20that.%20That%20was%20just%20a%3C/p%3E%3Cp%3Ejoke!%20I%20am%20not%20advocating%20sharing%20a%20liquor%20infused%20fruitcake%20with%3C/p%3E%3Cp%3Echildren!)%3C/p%3E%3Cp%3EThe%20recipe%20is%20as%20follows%20and%20you%20should%20start%20now%20if%20you%20want%20to%20be%20on%3C/p%3E%3Cp%3Etime%20for%20Christmas,%20as%20it%20takes%20up%20to%20a%20MONTH%20to%20soak%20the%20fruit%3C/p%3E%3Cp%3Eproperly!%3C/p%3E%3Cp%3EElaine%20Giammetta's%20Bolo%20Preto%3C/p%3E%3Cp%3EMakes%201%20large%20loaf%20%20or%208%20individual%20loafs%20(Individual%20loaf%20shown%20here)%3C/p%3E%3Cp%3EElaine%20Giammetta's%20Caribbean%20Black%20CakeIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees%20F.%3C/p%3E%3Cp%3EPut%20fruits%20and%20nuts%20into%20a%20very%20large%20plastic%20container%20(DO%20NOT%20USE%20METAL)%20Completely%20cover%20all%20the%20chopped%20fruits%20and%20nuts%20with%20the%20Frangelico%20and%20Amaretto.%20Cover%20tightly%20and%20put%20into%20a%20cool,%20dry%20spot.%20Let%20it%20soak%20for%20a%20minimum%20of%20one%20month,%20checking%20weekly%20to%20be%20sure%20that%20fruit%20remains%20completely%20covered%20with%20liquid.%20Add%20additional%20liquor%20as%20necessary%20as%20the%20liquor,%20even%20in%20a%20sealed%20container%20will%20evaporate.%20(We%20added%20at%20least%201%20more%20bottle%20of%20each%20liquor)%20Told%20you%20this%20is%20NOT%20for%20kids!%3C/p%3E%3Cp%3EAfter%2030%20days%20drain%20the%20excess%20liquid%20from%20the%20marinated%20fruit,%20reserving%20the%20liquid%20to%20use%20later.%20Cream%20together%20butter,%20sugar%20and%20vanilla.%20Beat%20eggs%20for%203%20minutes%20on%20low.%20Add%20the%20sugar/butter%20mixture%20to%20the%20eggs.%20Add%20salt%20to%20the%20flour,%20slowly%20incorporate%20flour%20into%20the%20fruit/nut%20mixture.%20Gradually%20add%20egg%20and%20butter%20mixture%20to%20the%20fruit%20until%20you%20have%20the%20consistency%20of%20a%20cake%20batter.%20If%20necessary,%20add%20additional%20flour,%20being%20careful%20not%20to%20add%20too%20much,%20as%20the%20fruit%20mixture%20will%20be%20very%20%E2%80%98wet.%E2%80%99%3C/p%3E%3Cp%3EElaine%20Giammetta's%20Caribbean%20Black%20Cake%3C/p%3E%3Cp%3ELightly%20butter%20and%20flour%20baking%20pans.%20(I%20like%20to%20use%20the%20small%20individual%20loaf%20pans.)%20Pour%20batter%20into%20pans%20%C2%BE%20full.%20Cook%20until%20toothpick%20inserted%20comes%20out%20clean.%20Be%20sure%20to%20check%20on%20cakes%20periodically,%20if%20top%20begins%20to%20darken,%20cover%20with%20aluminum%20foil%20to%20prevent%20burning.%20Depending%20on%20the%20size%20of%20your%20pan,%20cooking%20time%20can%20take%20up%20to%20an%20hour%20(Bundt%
