- In a saucepan combine the grated chocolate and all the other ingredients. Set the pan over medium heat and stir constantly. When it begins to thicken, let a drop fall from a spoon into a bowl of ice water. If it dissolves continue to cook and test till the droplet falls to the bottom as a pearl (217 to 221 degrees). Remove pan from heat.
- Pour mix onto a greased marble slab or possibly a platter and spread it out with a narrow blade spatula. Score the candy into squares with an oiled knife. Let the candy cold. When cool, cut into pcs along scores.
