%20to%20heavy%20syrup%20(50%25)%20and%20save%20them%20for%20a%20winter%20cobbler%20or%20pie.%20I%20put%20up%20peaches%20three%20years%20ago%20when%20I%20started%20canning%20and%20honestly%20it%20was%20pretty%20awful.%20I%20hadn%E2%80%99t%20yet%20mastered%20the%20skill%20of%20blanching,%20essential%20for%20easy%20peel%20peaches.%20They%20still%20tasted%20like%20peaches%20but%20were%20soft%20and%20squishy%20when%20I%20opened%20them%20a%20few%20months%20later.%20I%20had%20to%20drain%20the%20syrup%20and%20peaches%20for%20a%20good%20hour%20just%20to%20remove%20enough%20moisture%20so%20they%20wouldn%E2%80%99t%20soak%20through%20my%20pie%20crust.%20It%20was%20still%20a%20summer%20pie%20in%20the%20middle%20of%20February,%20but%20I%20was%20not%20impressed.%20It%20was%20then%20that%20I%20swore%20off%20whole%20fruit%20canning.%20I%E2%80%99m%20a%20perfectionist,%20and%20if%20I%20couldn%E2%80%99t%20do%20it%20perfectly%20(the%20first%20time%E2%80%A6)%20I%20figured%20jars%20of%20jam%20and%20a%20freezer%20full%20of%20berries%20was%20plenty%20good.%3C/p%3E%3Cp%3EI%20was%20perfectly%20content%20with%20my%20decision%20until%20my%20friend%20and%20I%20opened%20up%20a%20jar%20of%20her%20sour%20cherries%20from%20last%20harvest.%20There%20was%20no%20need%20for%20cobbler.%20We%20put%20together%20an%20elaborate%20cheese%20plate%20to%20serve%20them%20with%20but%20found%20eating%20them%20by%20the%20spoonful%20out%20of%20the%20jar%20was%20most%20effective.%20I%20pleaded%20to%20take%20home%20one%20of%20her%20last%20jars%20and%20poured%20its%20fruit%20and%20syrup%20contents%20over%20generous%20bowls%20of%20vanilla%20ice%20cream.%20Pure%20magic.%20I%20knew%20I%20wouldn%E2%80%99t%20be%20lucky%20enough%20to%20keep%20stealing%20her%20canned%20cherries%20(did%20I%20mention%20she%E2%80%99s%204%20states%20away?)%20so%20I%E2%80%99d%20have%20to%20suck%20it%20up%20and%20go%20back%20on%20my%20%E2%80%9Cno%20whole%20fruit%E2%80%9D%20canning%20rule.%20Of%20course,%20being%20me,%20I%20couldn%E2%80%99t%20just%20use%20simple%20syrup.%20There%20had%20to%20be%20a%20twist.%3C/p%3E%3Cp%3EThere%20are%20plenty%20of%20recipes%20out%20there%20for%20bourbon%20peaches,%20bourbon%20apple%20butter,%20even%20bourbon%20tomato%20jam.%20So%20why%20not%20bourbon%20cherries?%20I%20scoured%20every%20canning%20book%20I%20had%20plus%20online%20sources%20and%20the%20general%20consensus%20is%20alcohol%20is%20a%20preservative.%20Often%20times%20you%20don%E2%80%99t%20even%20have%20to%20process%20the%20jars%20(like%20a%20few%20bourbon%20cherry%20recipes%20I%20came%20across)%20but%20the%20shelf%20life%20is%20a%20bit%20shorter%20and%20I%20feel%20a%20bit%20safer%20knowing%20they%E2%80%99re%20really%20sealed.%20So%20I%20toyed%20with%20my%20simple%20syrup%20recipe,%20adding%20enough%20bourbon%20to%20get%20the%20flavor%20but%20not%20completely%20saturate%20the%20cherries%20in%20booze.%20After%20canning%20the%20cherries,%20I%20ended%20up%20with%20an%20extra%20cup%20of%20cherry%20bourbon%20syrup.%20Not%20a%20bad%20situation%20to%20be%20in.%20Mixed%20with%20a%20bit%20of%20seltzer%20and%20it%E2%80%99s%20the%20perfect%20summer%20cocktail!%3C/p%3E%3Cp%3EMix%20cherries,%201/2%20cup%20sugar%20and%20vanilla%20bean%20with%20seeds%20in%20a%20medium%20bowl.%20Let%20macerate%204%20hours%20to%20really%20extract%20all%20the%20juices.%20Discard%20vanilla%20bean.%20In%20a%20medium%20saucepan%20stir%20together%20cherries%20with%20juice,%20remaining%20sugar,%20water%20and%20bourbon.%20Cook%20over%20medium-low%20heat%20until%20sugar%20is%20completely%20dissolved.%20Bring%20to%20a%20slow%20boil%20and%20cook%20an%20additional%202-3%20minutes%20until%20cherries%20are%20heated%20through.%20Ladle%20cherries%20into%20half-pint%20jars.%20Cherries%20should%20be%20packed%20tightly%20but%20not%20crammed.%20Cover%20cherries%20with%20syrup%20leaving%201/2%20inch%20headspace.%20Process%20in%20a%20boiling%20water%20bath%20for%2025%20minutes.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E){kind=link}
