,%20knowing%20that%20spring%20is%20just%20a%20few%20short%20weeks%20away.%20But%20wait.%20March%2020%20doesn%E2%80%99t%20instantly%20bring%20a%20new%20season%20of%20fresh%20produce.%20Plants%20are%20still%20seedlings,%20barely%20yet%20being%20transported%20from%20greenhouse%20to%20ground.%20It%E2%80%99ll%20be%20another%20month%20at%20least%20before%20we%20see%20the%20first%20stalks%20of%20asparagus%20make%20their%20way%20to%20the%20Greenmarkets%20and%20still%20longer%20for%20those%20first%20stalks%20of%20rhubarb%20and%20ripe%20strawberries.%3C/p%3E%3Cp%3EI%20prepare%20well%20for%20the%20winter,%20canning%20and%20freezing%20whatever%20produce%20I%20can%20throughout%20the%20summer%20and%20fall%20months.%20Remember%20the%20weekend-long%20Tomato%20Wars?%20I%E2%80%99m%20lucky%20to%20have%20strawberry%20rhubarb%20jam%20or%20balsamic%20cherry%20preserves%20to%20slather%20on%20my%20toast,%20butternut%20squash%20to%20stir%20into%20my%20favorite%20mac%20&%20cheese%20and%20salsa%20to%20savor%20with%20chips.%20But%20around%20this%20time%20of%20year%20it%20all%20comes%20to%20an%20end.%20Last%20weekend%20I%20used%20my%20last%20bag%20of%20frozen%20corn.%20Heartbreaking%20as%20it%20was,%20I%20was%20determined%20to%20create%20something%20amazing%20to%20let%20the%20last%20of%20my%20summer%20bounty%20sing.%3C/p%3E%3Cp%3ERisotto%20has%20always%20been%20a%20favorite%20of%20mine.%20After%20many%20trials,%20I%20learned%20its%20ease%20comes%20from%20patience%20and%20attention.%20Saute%20the%20veggies,%20toast%20the%20rice,%20stir%20in%20the%20liquid%20until%20it%20becomes%20dense%20and%20creamy.%20I%20paired%20my%20corn%20with%20leeks%20to%20replace%20the%20need%20for%20onions%20plus%20add%20a%20bit%20of%20greenery%20to%20the%20pale%20yellow%20blend.%20While%20I%E2%80%99m%20usually%20quite%20content%20with%20my%20all%20veggie%20dishes,%20the%20sweetness%20of%20the%20corn%20was%20strong%20and%20the%20meal%20seemed%20in%20complete.%20The%20stay%20vegetarian,%20I%20opted%20for%20a%20poached%20egg,%20breaking%20the%20yolk%20and%20letting%20its%20richness%20coat%20the%20dish.%20On%20the%20other%20hand,%20if%20you%E2%80%99re%20in%20the%20mood%20for%20a%20meat%20fix,%20try%20adding%20a%20bit%20of%20crispy%20pancetta%20to%20the%20dish%20before%20serving.%3C/p%3E%3Cp%3EIn%20a%20large%20saucepan,%20bring%20broth%20to%20a%20boil.%20Reduce%20heat%20and%20simmer,%20to%20be%20added%20gradually%20to%20risotto.%20Heat%20oil%20in%20heavy%20large%20saucepan%20or%20dutch%20oven%20over%20medium%20heat.%20Add%20leeks%20and%20cook%20until%20soft%20and%20slightly%20browned,%20stirring%20occasionally.%20Add%20rice%20to%20pan%20and%20toast%20for%201%20minute%20stirring%20constantly.%20Add%20wine;%20stir%20until%20absorbed,%20about%202%20minutes.%3C/p%3E%3Cp%3ELadle%20warm%20broth%20into%20pan,%20just%20enough%20to%20cover%20risotto;%20stir%20until%20broth%20is%20absorbed.%20Repeat%20adding%20broth%20and%20stirring%20until%20rice%20is%20tender%20but%20still%20firm%20to%20bite%20and%20sauce%20is%20creamy,%20stirring%20frequently,%20about%2020%20minutes.%20Add%20corn,%20cheese,%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3EMeanwhile,%20bring%20a%20large%20skillet%20of%20water%20just%20to%20simmer%20over%20medium-low%20heat.%20Sprinkle%20water%20with%20salt.%20Working%20with%201%20egg%20at%20a%20time,%20crack%20into%20small%20bowl%20and%20slide%20egg%20into%20simmering%20water.%20Cook%20eggs%20until%20whites%20are%20cooked%20through%20but%20yolks%20are%20still%20runny,%203%20to%204%20minutes.%20Using%20slotted%20spoon,%20top%20risotto%20in%20each%20bowl%20with%20a%20poached%20egg.%20Sprinkle%20egg%20with%20salt%20and%20pepper.%20Serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
