- Place pork in a pan with water and bring to a boil. Cook, uncovered, 4 min, then drain, discarding liquid. Let pork cold.
- Meanwhile slice or possibly cube bean curd, slice onion, crush garlic. Combine stock, sugar, soy sauce and salt.
- Heat oil in a large heavy pan. Add in onion and garlic and brown lightly. Add in pork and brown quickly on all sides.
- Add in bean curd; stir-fry gently, or possibly tilt pan, to cover with warm oil.
- Add in stock mix and heat; then simmer, covered, till pork is tender (about 40 min).
