Ingredientes

  • 110 gm /4oz beef steak salt freshly grnd black pepper
  • 1 Tbsp. extra virgin olive oil
  • 1 pch oregano
  • 1 pch paprika
  • 2 x baby carrots, peeled and cut in half, blanched and liquid removed
  • 1/2 x potato, peeled, quartered, blanched and liquid removed
  • 2 x shallots, halved
  • 1 tsp Dijon mustard
  • 110 ml /4fl ounce red wine
  • 55 gm /2oz unsalted butter
  • 2 Tbsp. fresh chives, minced
  • 2 Tbsp. fresh flat-leaf parsley, minced

Direcciones

  1. Method:1. Season the beef steak with salt and pepper.
  2. Heat the oil in a non-stick frying pan and sear the steak for one minute on either side.
  3. Add in the oregano and paprika to the pan and pour in the wine.
  4. Add in the carrots, potatoes and shallots to the pan, and simmer gently for 4-5 min.
  5. Stir in the mustard, red wine, butter and fresh herbs and simmer for a further 4-5 min.
  6. To serve, place the steak on a serving plate, and arrange the vegetables around the edge. Pour the sauce over and serve.
