Ingredientes

  • 2 x Pig's trotters
  • 1 1/2 lb Knuckle of veal
  • 1 x Shin of beef
  • 4 x Bay leaves
  • 6 x Cloves
  • 1/2 tsp Peppercorns
  • 1/2 tsp Whole allspice
  • 1 dsh Salt
  • 1/2 c. Vinegar

Direcciones

  1. Halve pig's trotters and meat, put in saucepan and just cover with water, also add in bay leaves, cloves, pepper-corns, allspice and salt.
  2. Let boil for 3 - 4 hrs. When cooked take out meat and chop finely, remove all bones, strain liquid into a basin, add in minced meat and vinegar, pepper and salt to taste. Put over fire and let come to boil. Pour into basins to set.
