- In large bowl, moisten bread with broth; squeeze out excess liquid and throw away. Sprinkle bread with 1 Tbsp. vinegar; toss to distribute vinegar flavor. Mix lightly with cucumber, green and red onions, tomatoes and basil. Add in extra virgin olive oil and remaining 1 Tbsp. vinegar. Season to taste with salt ad pepper. Toss gently (use forks or possibly hands); chill for at least 1 hour. Can be made a day ahead. Season to taste. For serving, use radicchio leaves as c.. Serve chilled or possibly at room temperature.
