%3C/p%3E%3Cp%3EA%20word%20though%20%E2%80%93%20I%20have%20not%20included%20exact%20measurements%20for%20the%20condiments/spices%20in%20the%20recipe%20included%20below.%20I%20usually%20eyeball%20the%20measurements,%20and%20am%20sure%20it%20works%20far%20better%20than%20following%20a%20given%20measure%20to%20the%20tee.%20Go%20on%20and%20try%20this%20out%20%E2%80%93%20and%20I%20hope%20it%20is%20part%20of%20your%20wonderful%20Sunday%20brunch!%20:)%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EBread%20%E2%80%93%201%20loaf%20(approx)%3C/p%3E%3Cp%3ETomatoes%20%E2%80%93%203%20big%20or%204%20medium%3C/p%3E%3Cp%3EOnions%20%E2%80%93%201%20big%20and%201%20medium%3C/p%3E%3Cp%3EGreen%20chilli%20%E2%80%93%201%20big%3C/p%3E%3Cp%3ECorriander%20leaves%20%E2%80%93%20for%20garnish%3C/p%3E%3Cp%3EMaking%20the%20Bread%20Upma%3C/p%3E%3Cp%3ECut%20the%20bread%20into%20cubes.%20Heat%20a%20thick-bottomed%20wok%20on%20the%20fire%20(don%E2%80%99t%20add%20any%20oil%20in%20it).%20When%20the%20wok%20is%20hot,%20toss%20in%20the%20bread%20and%20keep%20tossing%20the%20pieces%20around%20until%20they%20become%20a%20very%20light%20brown.%20Drizzle%20a%20spoon%20or%20two%20of%20oil%20over%20the%20bread%20and%20toss%20it%20around%20well%20so%20that%20the%20cubes%20are%20evenly%20toasted.%20Keep%20turning%20the%20cubes%20around%20regularly,%20so%20that%20the%20heat%20is%20evenly%20distributed.%20When%20the%20cubes%20start%20to%20turn%20a%20darker%20brown,%20take%20the%20wok%20off%20fire%20and%20keep%20aside%20to%20cool.%3C/p%3E%3Cp%3EChop%20the%20tomatoes%20into%20cubes%20and%20keep%20aside.%20Slice%20the%20green%20chilli%20lengthwise%20and%20then%20chop%20into%20tiny%20bits%20(keep%20the%20seeds%20if%20you%20like%20it%20to%20be%20spicy).%20Slice%20the%20onions%20into%20long,%20thin%20strips.%3C/p%3E%3Cp%3EHeat%20a%20big%20non-stick%20pan%20or%20work.%20When%20it%20becomes%20hot,%20pour%20in%20some%20oil.%20After%20about%20half-a-minute,%20add%20a%20generous%20helping%20of%20cumin%20seeds%20and%20let%20them%20simmer.%20When%20the%20seeds%20turn%20a%20dark%20brown,%20add%20the%20green%20chillies.%20After%20half-a-minute,%20add%20the%20ginger-garlic%20paste%20and%20mix%20with%20the%20oil.%20(The%20oil%20will%20splutter%20sharply%20when%20you%20add%20the%20paste,%20so%20keep%20a%20lid%20handy.)%20After%20a%20minute,%20add%20the%20onions%20and%20mix%20everything%20together%20well.%20When%20the%20onions%20become%20transparent,%20add%20in%20the%20tomatoes%20and%20mix%20everything%20well.%20Smash%20a%20couple%20of%20the%20tomato%20pieces.%20Lower%20the%20heat%20slightly.%20Add%20in%20the%20turmeric%20powder,%20red%20chilli%20powder%20and%20salt%20and%20mix%20well.%20Sprinkle%20a%20pinch%20of%20sugar%20and%20mix%20well.%20Add%20a%20tablespoon%20(approx)%20or%20ketchup%20and%20mix%20it%20all%20together.%20Let%20simmer%20for%20about%20two%20minutes.%3C/p%3E%3Cp%3EToss%20in%20all%20the%20bread%20and%20quickly%20mix%20together%20so%20that%20the%20tomato%20mixture%20coats%20the%20bread%20pieces%20evenly.%20Take%20care%20not%20to%20lump%20the%20bread%20together%20%E2%80%93%20use%20a%20flat%20ladle%20to%20spread%20the%20bread%20around.%20After%20a%20few%20minutes,%20when%20the%20bread%20looks%20moist%20(but%20not%20wet),%20take%20it%20off%20the%20heat.%20Chop%20some%20sprigs%20of%20coriander%20leaves%20and%20toss%20into%20the%20bread%20upma%20and%20give%20it%20one%20final%20mix.%3C/p%3E%3Cp%3EServe.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
