%20makes%20us%20feel%20so%20close%20to%20her.%20More%20than%20her%20recipes%20we%20have%20always%20loved%20to%20go%20through%20her%20quote%20worthy%20descriptions%20that%20she%20always%20adds%20prior%20to%20her%20each%20and%20every%20recipe.%20Yes,%20we%20are%20talking%20about%20none%20other%20than%20our%20dear%20Rafeeda%20from%20THE%20BIG%20SWEET%20TOOTH%20As%20the%20name%20of%20her%20blog%20so%20is%20she...a%20very%20sweeeeeet%20person.%20When%20Rafeeda%20whom%20we%20lovingly%20nicknamed%20Rafee(without%20her%20permission)%20asked%20us%20to%20do%20a%20guest%20post,%20we%20were%20very%20excited%20and%20happy.%20We%20were%20wondering%20what%20should%20we%20give%20her.%20As%20we%20were%20on%20our%20vacation%20back%20home%20in%20Kerala,%20we%20decided%20to%20do%20a%20Keralite%20dish%20itself.%20You%20can%20find%20our%20guest%20post%20for%20her%20here.%3C/p%3E%3Cp%3EBrinjal/Vazhuthananga%20Theeyal%3C/p%3E%3Cp%3ESpicy%20food%20and%20monsoons%20go%20hand%20in%20hand%20for%20me.%20Its%20raining%20cats%20and%20dogs%20outside,%20and%20sitting%20at%20home%20in%20the%20comfort%20of%20the%20company%20of%20your%20dear%20ones%20is%20something%20that%20keeps%20you%20warm%20inside.%20To%20top%20it,%20how%20about%20some%20spicy%20food%20from%20your%20mom's%20hand.%20Amma's%20food%20is%20something%20that%20is%20irreplaceable.%20I%20am%20sure%20this%20is%20a%20fact%20which%20you%20all%20will%20agree%20with%20me.%3C/p%3E%3Cp%3EHere%20comes%20a%20typical%20Kerala%20spicy%20dish,%20which%20my%20Amma%20cooked%20for%20us%20on%20a%20heavy%20rainy%20day.%20The%20aroma%20of%20the%20roasted%20coconut%20and%20shallots%20made%20me%20literally%20drooooool;%20which%20is%20indeed%20a%20very%20beautiful%20smell!!%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EHeat%20around%204%20tablespoons%20of%20oil%20in%20a%20kadai/cheenachatti.%20Add%2020%20shallots%20and%20fry%20until%20the%20shallots%20turn%20light%20golden.%20Drain%20from%20the%20oil%20and%20keep%20aside.%3C/p%3E%3Cp%3ETo%20the%20same%20oil%20add%20the%20sliced%20brinjals%20and%20fry%20well%20until%20the%20brinjals%20turn%20brown%20in%20colour.%20Drain%20and%20keep%20aside.%3C/p%3E%3Cp%3EHeat%20another%20pan%20and%20add%20the%20coconut,%20fennel,%20green%20chilli,%20garlic,%20remaining%20shallots,%20few%20curry%20leaves.%20Dry%20roast%20on%20a%20medium%20low%20flame%20all%20these%20until%20the%20coconut%20turns%20golden%20brown%20in%20colour.%3C/p%3E%3Cp%3EAt%20this%20stage,%20add%20the%20coriander%20powder,%20chili%20powder%20and%20roast%20for%202-3%20minutes%20or%20until%20the%20raw%20smell%20of%20the%20the%20powders%20goes%20off.%3C/p%3E%3Cp%3ESwitch%20off%20the%20flame.%20Once%20cooled,%20grind%20this%20into%20a%20smooth%20paste,%20adding%20enough%20water.%3C/p%3E%3Cp%3EHeat%20a%20kadai,%20pour%20the%20extracted%20tamarind%20juice%20and%20the%20grinded%20paste.%20Add%201%20-%2011/2%20cups%20of%20water,%20salt%20and%20allow%20it%20to%20boil%20well.%3C/p%3E%3Cp%3EOnce%20it%20is%20brought%20to%20a%20boil%20add%20the%20fried%20shallots%20and%20brinjal.%20Continue%20to%20cook%20until%20the%20gravy%20thickens.%3C/p%3E%3Cp%3ESwitch%20off%20the%20flame%20and%20garnish%20with%20a%20sprig%20of%20curry%20leaves.%3C/p%3E%3Cp%3E*%20You%20can%20season%20with%20mustard,%20red%20chillies,%20few%20fenugreek%20seeds%20%20and%20curry%20leaves.%20Just%20splutter%20all%20of%20these%20in%20a%20little%20coconut%20oil%20and%20add%20it%20to%20the%20dish%20finally.%20Its%20optional.%20Here%20the%20seasoning%20was%20not%20done%20but%20still%20it%20tasted%20yummy.%20But%20seasoning%20will%20make%20the%20theeyal%20taste%20more%20yummy!!%3C/p%3E){kind=link}
