.%20And%20I%20was%20intrigued%20by%20the%20red%20wine.%20After%20all%20I%20use%20beer%20all%20the%20time.%20Why%20not%20red%20wine?%3C/p%3E%3Cp%3EBut%20first%20let%20me%20back%20up%20a%20bit%20and%20say%20I%20am%20loving%20River%20Cottage%20Veg,%20which%20my%20darling%20family%20gave%20me%20for%20my%20birthday%20(along%20with%20some%20other%20goodies).%20Fearnley-Whittingstall%20is%20a%20longtime%20British%20food%20writer,%20and%20he%20is%20always%20interesting%20to%20read.%20And,%20as%20important,%20I%20have%20quite%20a%20few%20recipes%20boookmarked%E2%80%93most%20of%20them%20with%20more%20of%20an%20Asian%20influence,%20not%20so%20much%20in%20the%20Tex%20Mex%20vein.%3C/p%3E%3Cp%3EPlease%20indulge%20the%20different%20photos,%20as%20I%20play%20with%20my%20new%20backdrops%20and%20figure%20out%20which%20napkins%20look%20good%20with%20what.%20Feel%20free%20to%20share%20a%20color%20preference%20in%20the%20comments!%20Also,%20in%20typical%20distracted%20fashion,%20I%20marinated%20slivered%20cabbage%20in%20lemon%20juice%20all%20day%20to%20serve%20with%20the%20chili%20and%20then%20forgot%20to%20put%20it%20in%20the%20photos.%20So%20I%20only%20have%20a%20few%20with%20the%20cabbage,%20but%20I%20highly%20recommend%20it%20as%20it%20adds%20a%20citrusy%20crunch%E2%80%93and%20means%20I%20did%20not%20miss%20the%20tortilla%20chips!%3C/p%3E%3Cp%3EAs%20for%20my%20vegetarian%20chili,%20I%20read%20through%20Fearnley-Whittingstall%E2%80%99s%20recipe%20and%20then%20closed%20the%20book.%20Which%20is%20not%20to%20say%20that%20I%20was%20not%20inspired%20by%20the%20recipe,%20I%20completely%20was.%20But%20aside%20from%20some%20of%20the%20vegetable%20suggestions%20and%20the%20use%20of%20red%20wine,%20I%20just%20worked%20from%20my%20own%20tastes,%20since%20I%20know%20how%20I%20like%20my%20Tex%20Mex!%20I%20did%20stay%20true%20to%20the%20author%E2%80%99s%20challenge%20to%20keep%20the%20dish%20completely%20vegetarian.%20Not%20because%20he%20preaches%20vegetarianism,%20he%20definitely%20does%20not,%20but%20he%20does%20preach%20allowing%20vegetables%20to%20shine%20without%20worrying%20about%20a%20meat%20flavor.%20I%20added%20extra%20beans%20and%20went%20with%20it.%3C/p%3E%3Cp%3EBritish%20Vegetarian%20Chili%20with%20Red%20Wine%20%20%20Inspired%20by%20Hugh%20Fearnley-Whittingstall.%20This%20recipe%20was%20plenty%20spicy%20for%20us%20from%20the%20Hatch%20chile%20pepper,%20but%20if%20desired%20also%20add%20cayenne%20pepper%20to%20taste.%20Leave%20yourself%20a%20good%20hour%20or%202%20for%20this%20chili%20to%20develop%20its%20flavors.%20It%20could%20easily%20be%20made%20in%20the%20slow%20cooker%20as%20well.%20%20Author:%20TheSpicedLife%20Recipe%20type:%20Entree%20%20%20Ingredients%3C/p%3E%3Cp%3EFor%20chili:%202-3%20T%20vegetable%20oil%20(I%20used%20avocado)%202%20medium%20onions,%20chopped%20salt%20to%20taste%206-8%20cloves%20garlic,%20minced%202%20sweet%20bell%20peppers,%20chopped%201%20t%20dried%20Mexican%20oregano%201%20t%20dried%20thyme%202%20t%20ground%20cumin%202%20t%20ground%20ancho%20chili%20pepper%20%C2%BC%20t%20allspice%20%C2%BD%20t%20Ceylon%20cinnamon%204%20medium-large%20tomatoes,%20very%20coarsely%20chopped%20%C2%BE%20cup%20red%20wine%20(I%20used%20a%20Spanish%20rioja--be%20sure%20to%20use%20something%20you%20would%20drink)%203%20cups%20water%201%2015-oz%20can%20drained%20and%20rinsed%20Great%20Northern%20white%20beans%201%2015-oz%20can%20drained%20and%20rinsed%20black%20beans%201%20roasted%20hatch%20chile%20pepper,%20chopped%20(poblano%20is%20fine%20too)%202%20zucchini,%20sliced%20into%20half%20moons%202%20medium%20sweet%20potatoes,%20peeled%20and%20cut%20into%20bite%20sized%20pieces%20(can%20also%20use%20butternut%20squash)%202%20T%20strong%20coffee%20(I%20happened%20to%20have%E2%80%94you%20could%20also%20use%20instant%20coffee%20or%20espresso)%20For%20serving:%20shredded%20cheddar%20cheese%20sour%20cream%20(I%20prefer%20full%20fat,%20especially%20in%20a%20vegetarian%20chili)%20shredded%20cabbage%20tossed%20in%20lemon%20juice%20%20%20Instructions%3C/p%3E%3Cp%3EHeat%20the%20oil%20in%20a%20large,%20heavy%20bottomed%20pot,%20such%20as%20a%20Dutch%20oven%20over%20medium%20high%20heat.%20Add%20the%20onions%20with%20a%20pinch%20of%20salt.%20Cook,%20stirring%20occasionally,%20for%205-7%20minutes,%20until%20they%20release%20their%20water%20and%20begin%20to%20turn%20golden.%20Add%20the%20garlic,%20bell%20peppers%20and%20oregano%20and%20thyme.%20Add%20another%20pinch%20of%20salt%20and%20cook,%20stirring,%20for%20another%205%20minutes.%20Add%20the%20cumin,%20ancho%20chile%20pepper,%20allspice%20and%20Ceylon%20cinnamon.%20Stir%20for%20one%20minute.%20Add%20the%20tomatoes%20and%20red%20wine%20with%20another%20pinch%20of%20salt.%20Bring%20to%20a%20boil,%20and%20reduce%20the%20wine%20for%205%20minutes.%20Add%20the%20water,%20beans%20and%20roasted%20chile%20pepper.%20Bring%20to%20a%20boil%20and%20then%20cover%20and%20reduce%20the%20heat%20to%20maintain%20a%20gentle%20simmer.%20Let%20cook%20for%20one%20hour.%20Add%20the%20zucchini%20and%20sweet%20po
