Ingredientes

  • 3 Tbsp. butter
  • 1 c. sliced fresh mushrooms
  • 1/2 c. minced peeled onion
  • 6 x Large eggs
  • 1/2 med red bell pepper cut 1/4" strips
  • 1 c. frzn broccoli florets thawed
  • 4 ounce cheddar cheese shredded

Direcciones

  1. Heat butter in 10-inch skillet till sizzling; add in mushrooms and onion. Cook over medium heat till tender (3 to 4 min).
  2. Beat Large eggs in large bowl till frothy. Pour into skillet. Gently stir egg mix over medium heat to cook proportionately on bottom (3 to 4 min). As egg mix sets, lift edges with spatula to allow uncooked portion to flow underneath.
  3. Arrange red pepper strips and broccoli on top. Cover; continue cooking till Large eggs are set (4 to 5 min).
  4. Sprinkle with cheese; cut into wedges.
  5. This recipe yields 6 servings.
