Receta Broccoli And Mushroom Frittata

Ingredientes
- 3 Tbsp. butter
- 1 c. sliced fresh mushrooms
- 1/2 c. minced peeled onion
- 6 x Large eggs
- 1/2 med red bell pepper cut 1/4" strips
- 1 c. frzn broccoli florets thawed
- 4 ounce cheddar cheese shredded
Direcciones
- Heat butter in 10-inch skillet till sizzling; add in mushrooms and onion. Cook over medium heat till tender (3 to 4 min).
- Beat Large eggs in large bowl till frothy. Pour into skillet. Gently stir egg mix over medium heat to cook proportionately on bottom (3 to 4 min). As egg mix sets, lift edges with spatula to allow uncooked portion to flow underneath.
- Arrange red pepper strips and broccoli on top. Cover; continue cooking till Large eggs are set (4 to 5 min).
- Sprinkle with cheese; cut into wedges.
