%20the%20McDougall%20cookbook%20I%20have.%20%20Dinner%20was%20my%20own%20concoction....but%20was%20pretty%20darn%20good,%20if%20I%20don't%20say%20so%20myself!%3C/p%3E%3Cp%3ELet%20me%20start%20with%20lunch.%20%20I%20made%20the%20Broccoli-Barley%20Toss%20from%20%22The%20New%20McDougall%20Cookbook%22.%20%20I%20only%20changed%20a%20few%20things.%20%20First,%20I%20added%20kale,%20because%20I%20love%20kale!%20Second,%20I%20used%20Shiitake%20mushrooms%20instead%20of%20regular%20ones%20(actually,%20he%20doesn't%20specify,%20to%20be%20exact).%20%20I%20didn't%20have%20snow%20peas%20or%20bean%20sprouts%20and%20I%20left%20out%20the%20green%20bell%20peppers.%20%20I%20think%20that's%20it.%20%20And%20technically,%20I%20didn't%20toss%20it!%20%20I%20put%20the%20vegetables%20on%20top%20of%20the%20barley.%20%20It%20was%20very%20good......but%20I%20could've%20used%20just%20a%20bit%20more%20flavoring.%20%20Maybe%20next%20I'll%20use%20real%20ginger%20and%20something%20else.%3C/p%3E%3Cp%3EOn%20to%20dinner.%20%20I%20still%20had%20some%20eggplant%20left...I%20had%20already%20sliced%20it%20and%20put%20it%20in%20a%20bag,%20raw.%20%20I'm%20really%20not%20a%20fan%20of%20eggplant....I'm%20sure%20I've%20mentioned%20that%20before.%20%20My%20husband%20wanted%20me%20to%20make%20something%20with%20it....something%20with%20tomato%20sauce%20and%20something%20spicy.%20%20So%20I%20did.%20%20And%20I%20actually%20liked%20it!%20%20I%20tasted%20very%20much%20like%20eggplant%20parmesan,%20except%20there%20was%20no%20cheese%20in%20it.....it%20was%20vegan!%3C/p%3E%3Cp%3EPut%20the%20eggplant%20in%20a%20colander%20and%20sprinkle%20a%20lot%20of%20salt%20on%20it.%20%20Let%20it%20sit%20for%2030%20minutes%20to%20draw%20out%20the%20water/bitterness.%20%20Rinse,%20dry,%20and%20set%20aside.%20%20Spray%20a%20bit%20of%20oil%20on%20a%20cookie%20sheet.%20%20Mix%20the%20breadcrumbs%20with%20the%20seasonings%20(unless%20you%20have%20pre-seasoned%20crumbs),%20to%20taste.%20%20Put%20the%20almond%20milk%20in%20a%20bowl.%20%20Dip%20the%20eggplant%20in%20the%20milk,%20then%20cover%20with%20breadcrumbs.%20%20Lay%20them%20all%20out%20on%20the%20cookie%20sheet,%20single%20layer.%20%20Broil%20about%207%20minutes%20on%20each%20side.%3C/p%3E%3Cp%3ESpray%20a%20little%20in%20a%209x13%20pan.%20%20In%20a%20large%20bowl,%20mix%20the%20tomatoes%20with%20the%20spices%20(unless%20you%20are%20using%20jarred%20sauce,%20with%20seasonings).%20%20Spice%20it%20up!%20%20It's%20really%20good%20spicy.%20%20Put%20some%20at%20the%20bottom%20of%20the%20pan.%20%20Lay%20half%20the%20eggplant%20down%20on%20top%20of%20the%20sauce.%20%20Then%20add%20the%20peppers%20and%20squash.%20%20Pour%20more%20sauce%20over%20it.%20%20Then%20add%20the%20basil%20all%20over%20the%20top,%20followed%20by%20the%20rest%20of%20the%20eggplant.%20%20And%20top%20with%20more%20sauce.%20%20And%20sprinkle%20a%20good%20amount%20of%20seasoned%20breadcrumbs%20all%20over%20the%20top.%20%20Bake%20at%20350%20degrees%20for%20about%2030%20minutes.%3C/p%3E%3Cp%3EI%20made%20some%20extra%20red%20wine%20sauce%20to%20go%20on%20top,%20but%20as%20it%20turns%20out....we%20didn't%20need%20it.%20%20There%20was%20plenty%20of%20sauce%20in%20the%20baked%20dish.%20%20You%20could%20add%20zucchini,%20onions...etc...if%20you%20want.%3C/p%3E%3Cp%3EWe%20invited%20our%20friend,%20Dave,%20over%20for%20dinner.%20%20I%20think%20it%20was%20maybe%20a%20bit%20too%20hot%20for%20him.%20%20But%20if%20you%20like%20it%20spicy,%20go%20for%20it!%20%20I%20hope%20I%20didn't%20forget%20anything....because%20I%20never%20write%20this%20stuff%20down.%3C/p%3E%3Cp%3EI%20forgot,%20I%20made%20some%20hummus%20as%20an%20appetizer:%3C/p%3E%3Cp%3ETanya's%20Hummus:%3C/p%3E%3Cp%3E1%2016%20oz%20can%20chickpeas%3C/p%3E%3Cp%3Ejuice%20of%202-3%20lemons%20(I%20like%20it%20lemony!)%3C/p%3E%3Cp%3E1%20tbsp%20tahini%3C/p%3E%3Cp%3Esalt,%20pepper%3C/p%3E%3Cp%3EBlend%20it%20all%20together,%20add%20a%20little%20paprika%20and%20it's%20done!%20Served%20it%20with%20some%20raw%20veggies.%3C/p%3E%3Cp%3EAnd%20I%20guess%20that%20wraps%20it%20up!%20%20Still%20going%20to%20make%20millet%20soon......maybe%20tomorrow?%3C/p%3E%3Cp%3EUntil%20then....%3C/p%3E%3Cp%3EEat%20smart,%3C/p%3E%3Cp%3ET.%3C/p%3E){kind=link}
