%20tastes%20really%20good,%20my%20kiddos%20will%20gobble%20it%20up%20with%20little%20protest.%20I%20filed%20the%20idea%20for%20pesto%20made%20with%20broccoli%20away%20in%20the%20back%20of%20my%20mind.%3C/p%3E%3Cp%3EFast%20forward%20to%20last%20week%20when%20I%20found%20some%20lovely%20heads%20of%20reasonably-priced%20broccoli%20at%20my%20local%20market.%20I%20was%20thinking%20of%20making%20the%20broccoli%20into%20a%20stir%20fry%20or%20a%20nice%20side%20dish.%20Unfortunately%20(or%20maybe%20fortunately%20since%20this%20was%20so%20yummy),%20tonight%20I%20was%20running%20low%20on%20supplies.%20Grocery%20day%20is%20tomorrow.%20I'm%20%22scraping%20the%20bottom%20of%20the%20barrel%22%20here.%20After%20a%20careful%20inventory%20of%20my%20fridge%20and%20pantry%20I%20realized%20that%20I%20DID%20have%201)%20a%20refrigerated%20pizza%20crust%202)%20olive%20oil%203)%20garlic%204)%20a%20block%20of%20Parmesan%20cheese%205)%20pine%20nuts%20and%206)%20shredded%20mozzarella.%20Ah-ha%20(the%20light%20bulb%20went%20on).%20Time%20to%20make%20broccoli%20pesto%20and%20put%20it%20on%20a%20pizza!%20I%20wasn't%20sure%20how%20the%20pesto%20would%20turn%20out,%20but%20I%20knew%20that%20my%20family%20would%20eat%20pizza.%3C/p%3E%3Cp%3EMy%20family%20always%20enjoys%20traditional%20basil%20pesto%20so%20I%20assumed%20that%20a%20pesto%20pizza%20was%20a%20safe%20bet.%20%20I%20haven't%20made%20pesto%20since%20August,%20though.%20%20Basil%20is%20so%20darn%20expensive%20right%20now!%20This%20summer%20I%20plan%20to%20grow%20my%20own.%20%20Wanna%20see%20my%20herb%20garden?%20%20It's%20in%20the%20picture%20below....%3C/p%3E%3Cp%3EWhat,%20you%20can't%20find%20it?%20Well%20maybe%20that's%20because%20my%20herb-garden-to-be%20is%20under%20a%20fresh%20blanket%20of%20snow!%3C/p%3E%3Cp%3EYep.%20It's%20March%20and%20we%20had%20ANOTHER%20snow%20storm%20last%20night.%20Lovely.%3C/p%3E%3Cp%3EI%20snapped%20this%20picture%20of%20our%20backyard%20just%20before%20making%20dinner%20tonight.%3C/p%3E%3Cp%3EC'mon%20Spring!!!%3C/p%3E%3Cp%3EAnd%20so%20new%20my%20healthier%20and%20less%20expensive%20answer%20to%20basil%20pesto%20in%20early%20March%20is%20to%20use%20nutrient%20and%20fiber%20rich%20broccoli.%3C/p%3E%3Cp%3EI%20broke%20the%20heads%20into%20pieces%20and%20steamed%20them%20until%20tender%20(about%205%20minutes).%3C/p%3E%3Cp%3EThen,%20because%20my%20food%20processor%20went%20missing%20during%20our%20move,%20I%20employed%20my%20Pampered%20Chef%20chopper%20to%20mince%20the%20steamed%20broccoli.%3C/p%3E%3Cp%3EWhile%20I%20was%20preparing%20the%20broccoli,%20I%20popped%20some%20pine%20nuts%20into%20the%20oven%20for%20toasting.%20You%20want%20to%20toast%20em'%20until%20fragrant.%20Not%20until%20blackened....%3C/p%3E%3Cp%3EMy%20suggestion%20is%20to%20watch%20your%20pine%20nuts%20carefully%20during%20this%20step.%20This%20is%20not%20the%20first%20time%20that%20I%20have%20%20burned%20a%20batch%20of%20pine%20nuts.%20For%20the%20record,%20this%20batch%20went%20into%20the%20trash%20and%20I%20had%20to%20start%20over.%20I%20toast%20mine%20on%20a%20baking%20sheet%20at%20around%20200%20degrees.%20I%20recommend%20that%20you%20stir%20occasionally%20and%20check%20frequently%20until%20they%20start%20to%20lightly%20brown%20and%20are%20fragrant...at%20which%20point,%20%20get%20them%20outta%20there!%3C/p%3E%3Cp%3E*Toasting%20can%20also%20be%20accomplished%20in%20a%20skillet%20on%20your%20stovetop.%3C/p%3E%3Cp%3EOnce%20the%20second%20batch%20of%20pine%20nuts%20were%20toasted%20and%20slightly%20cooled,%20I%20added%20them%20to%20the%20broccoli%20with%20the%20grated%20Parmesan,%20minced%20garlic,%20salt,%20and%20a%20little%20dried%20basil.%3C/p%3E%3Cp%3EThen%20I%20attacked%20the%20mixture%20with%20my%20immersion%20blender.%20You%20could%20do%20all%20of%20this%20in%20your%20food%20processor%20or%20blender%20too.%20I%20just%20blended%20until%20the%20ingredients%20were%20all%20most%20smooth%20and%20combined.%20You%20don't%20want%20any%20whole%20pine%20nuts%20floatin'%20around%20in%20there....%3C/p%3E%3Cp%3EFinally,%20%20I%20blended%20in%201/2%20cup%20of%20olive%20oil.%3C/p%3E%3Cp%3EI%20ended%20up%20with%20a%20relatively%20light-colored%20(probably%20from%20all%20of%20the%20cheese%20that%20I%20added),%20thick%20(I%20could've%20added%20more%20oil,%20but%20I%20was%20out)%20pesto.%3C/p%3E%3Cp%3EThis%20made%20enough%20pesto%20for%20a%20couple%20of%20recipes,%20so%20I%20put%20away%20half%20to%20toss%20with%20pasta%20for%20dinner%20next%20week.%3C/p%3E%3Cp%3EWith%20the%20pesto%20made,%20I%20went%20to%20work%20on%20the%20pizza.%20I%20used%20a%20refrigerated%20crust.%20I%20really%20like%20Pillsbury's%20Thin%20Crust%20Pizza%20when%20I%20don't%20have%20the%20time%20to%20make%20my%20own,%20because%20it%20can%20be%20easily%20pressed%20into%20a%20baking%20sheet.%20I%20oiled%20the%20sheet%20and%20sprinkled%20it%20with%20cornmeal%20before%20%20pre-baking%20the%20crust%20for%20the%20recommended%205%20minutes%20before%20removing%20from%20the%20oven%20and%20spreading%20with%201%20cup%20of%20the%20pesto%20mixture.%3C/p%3E%3Cp%3EThen%20I%20topped%20the%20pizza%20with%20shredded%20cheese,%20halved%20grape%20tomatoes,%20and%201%20thinly%20sliced%20shallot.%20I%20decided%20to%20keep%20the%20toppings%20simple%20to%20allow%20the%20flavor%20of%20the%20pesto%20to%20shine%20through.%3C/p%3E%3Cp%3EBake%20the%20pizza%20for%20another%206-10%20minutes%20before%20removing%20it%20from%20the%20oven%20and%20slicing.%3C/p%3E%3Cp%3EEnjoy!%3C/p%3E%3Cp%3EKrista's%20Broccoli%20Pesto%20Pizza%3C/p%3E%3Cp%3EFor%20the%20pesto:%3C/p%3E%3Cp%3ETo%20make%20pesto:%3C/p%3E%3Cp%3EBreak%20up%20and%20steam%20broccoli.%20Finely%20chop.%20Toast%20pine%20nuts%20on%20a%20baking%20sheet%20in%20a%20200%20degree%20oven%20until%20golden%20and%20fragrant.%20Combine%20chopped%20broccoli,%20cheese,%20toasted%20pine%20nuts,%20minced%20garlic,%20dried%20basil,%20and%20salt%20until%20somewhat%20smooth%20and%20blended%20in%20food%20processor,%20blender,%20or%20with%20an%20immersion%20blender.%20Slowly%20add%20in%20olive%20oil%20and%20blend%20again%20until%20creamy.%3C/p%3E%3Cp%3ETo%20make%20the%20pizza:%3C/p%3E%3Cp%3EPrebake%20crust%20as%20directed.%20Spread%20with%201%20cup%20of%20pesto.%20Top%20with%20cheese,%20tomatoes%20and%20shallot%20(or%20onion).%20Bake%20as%20directed%20or%20until%20the%20cheese%20is%20melted%20and%20bubbly.%3C/p%3E%3Cp%3ENotes:%3C/p%3E%3Cp%3E*This%20was%20delicious!%20Just%20a%20hint%20of%20the%20broccoli%20taste%20could%20be%20detected,%20which%20was%20fine%20with%20us%20because%20we%20like%20broccoli.%3C/p%3E%3Cp%3E*%20Refrigerate%20remaining%20pesto%20for%20use%20in%20another%20recipe.%3C/p%3E%3Cp%3E*%20This%20would%20have%20been%20even%20better%20with%20fresh%20mozzarella%20slices%20instead%20of%20shredded%20mozzarella.%3C/p%3E%3Cp%3E*%20I%20grated%20my%20own%20Parmesan%20cheese,%20but%20the%20%22stuff%22%20in%20the%20green%20can%20would%20work%20fine%20too.%3C/p%3E%3Cp%3E*%20This%20is%20a%20versatile%20pizza.%20Top%20it%20however%20you%20like.%20Next%20time%20I%20will%20sprinkle%20some%20fresh%20basil%20over%20the%20top%20to%20enhance%20the%20taste%20and%20appearance.%3C/p%3E){kind=link}
