Ingredientes

  • For the fritters
  • ½ cup quinoa, to be cooked
  • 1 head (2 cups) broccoli (steamed and softened, but retaining a bit of bite)
  • ½ cup seasoned Italian breadcrumbs
  • 1 tablespoon nutritional yeast
  • 2 cloves garlic, minced
  • 2 Ener-G Eggs, (1 T powder, 4 T water)
  • 1 teaspoon olive oil
  • Salt and freshly ground black pepper

  • For the sauce
  • 1 tablespoon earth balance
  • ¼ cup of finely chopped shallots
  • 2 cloves minced garlic
  • 1.5 cups vegetable broth
  • 1 large bay leaf
  • 1 tablespoon fresh dill, chopped, reserve more dill for garnish Salt and freshly ground pepper, to taste
