Broiled Shrimp And Scallops

Ingredientes

  • 1 pound med. shrimp
  • 1 pound scallops
  • 1/2 c. extra virgin olive oil
  • 1/3 c. minced parsley
  • 1 garlic clove, finely minced
  • 1/2 c. dry unflavored bread crumbs
  • Salt and freshly grnd pepper to taste
  • Lemon wedges

Direcciones

  1. Shell and devein shrimp. Wash shrimp and scallops under cold running water. Pat dry with paper towels.In a large bowl, put together oil, parsley, garlic, bread crumbs and salt and pepper. Add in shrimp and scallops to mix. Mix till well coated. Let stand 1 hour. Preheat broiler.
  2. Remove shrimp and scallops from marinade. Gently press some extra bread crumb mix onto shrimp and scallops. Place alternately on a 4 to 6 inch metal skewers. Put skewers under hot broiler. Broil 2 min or possibly till golden brown. Turn skewers over and broil on the other side 2 min or possibly till golden brown. Serve immediately with lemon wedges.
