Ingredientes

  • 1 kg onions, medium
  • 150 gm sugar (caster)
  • 100 ml sherry
  • 50 ml white vinegar
  • 50 ml extra virgin olive oil pin cayenne salt, pepper

Direcciones

  1. Peel and finely slice the onions. Heat the oil in a heavy based pan and cook the onions over a low heat for 10 min till soft.
  2. Add in the sugar and cook till golden in colour, about 20 min. Add in the sherry and vinegar and continue to cook till mix is transparent.
  3. Ladle into sterilised jars and seal.
  4. Delicious with warm and cool meats.
  5. Keeps for 3-4 months.
  6. Ensure storage jars are well sterilised.
