.%20I%20walked%20through%20the%20store%20one%20time%20and%20once%20I%20got%20to%20the%20end%20I%20literally%20turned%20around%20and%20walked%20through%20it%20once%20more.%20I%20just%20love%20seeing%20ingredients%20I%20can't%20get%20anywhere%20near%20where%20I%20live!%3C/p%3E%3Cp%3EOne%20of%20the%20things%20I%20purchased%20was%20short-grained%20brown%20rice.%20I%20had%20been%20playing%20with%20the%20idea%20of%20making%20risotto%20with%20brown%20rice.%20I%20had%20never%20eaten%20anything%20like%20it%20before,%20but%20I%20thought%20it%20would%20be%20a%20good%20experiment.%20Normally,%20risotto%20is%20made%20with%20short%20grain%20white%20rice%20such%20as%20arborio%20because%20these%20types%20of%20rice%20are%20very%20starchy%20and%20leech%20their%20starch%20into%20the%20liquid%20they're%20cooked%20in,%20making%20a%20creamy%20consistency.%3C/p%3E%3Cp%3EI%20feel%20a%20lot%20of%20people%20get%20nervous%20when%20cooking%20risotto%20because%20of%20all%20the%20stirring.%20However,%20after%20having%20made%20risotto%20several%20times%20I%20don't%20get%20so%20nervous%20about%20the%20final%20product.%20It%20even%20seems%20like%20you%20don't%20have%20to%20stand%20there%20and%20stir%20the%20whole%20time!%20Not%20having%20to%20stand%20and%20stir%20the%20whole%20time%20is%20a%20bit%20of%20a%20relief%20considering%20this%20recipe%20took%20at%20least%2050%20minutes%20to%20cook.%20I%20actually%20watched%20Food%20Network%20while%20cooking.%20I%20stirred%20during%20the%20commercials%20and%20took%20a%20break%20when%20my%20programs%20came%20back%20on%20(which%20happened%20to%20be%20Giada%20at%20Home%20and%20Barefoot%20Contessa,%20my%20favorite%20shows).%20I%20left%20the%20veggies%20a%20little%20chunky%20and%20they%20were%20all%20cooked%20to%20the%20perfect%20consistency.%20The%20rice%20was%20creamy%20and%20cheesy%20and%20everything%20it%20ought%20to%20have%20been.%20I%20liked%20the%20extra%20flavor%20the%20brown%20rice%20added%20and%20I%20even%20liked%20it%20more%20than%20the%20white%20rice%20versions%20I%20have%20made%20before.%20Ironically,%20I%20found%20the%20basis%20for%20this%20recipe%20after%20googling%20%22brown%20rice%20risotto%22%20on%20the%20Whole%20Foods%20website.%20It%20must%20have%20been%20fate...%3C/p%3E%3Cp%3EBrown%20Rice%20Risotto%20alla%20Primavera%3C/p%3E%3Cp%3E1.%20Combine%20broth%20and%20water%20and%20bring%20to%20a%20boil%20in%20a%20medium%20saucepan.%20Add%20asparagus%20and%20blanch%20until%20tender-crisp,%202%20to%203%20minutes.%20Transfer%20asparagus%20to%20a%20bowl%20of%20iced%20water%20then%20drain%20and%20set%20aside.%20Cover%20broth-water%20mixture%20with%20a%20lid%20and%20bring%20back%20to%20a%20simmer.%3C/p%3E%3Cp%3E2.%20Heat%20oil%20in%20a%20medium%20saucepan%20over%20medium%20heat.%20Add%20onion%20and%20garlic%20to%20the%20oil%20and%20saute%20until%20translucent%20and%20softened,%20about%204%20to%205%20minutes.%3C/p%3E%3Cp%3E3.%20Add%20rice%20and%20cook,%20stirring%20often,%20until%20toasted,%20fragrant,%20and%20lightly%20translucent,%204%20to%205%20minutes.Add%20the%20wine%20and%20cook,%20stirring,%20until%20the%20wine%20is%20almost%20evaporated.%3C/p%3E%3Cp%3E4.%20Add%201%20cup%20of%20the%20broth-water%20mixture%20and%20cook,%20stirring%20constantly.%20Adjust%20the%20heat%20so%20that%20the%20rice%20maintains%20a%20simmer%20(about%20low-medium%20heat).%20Season%20with%20a%20little%20salt%20and%20pepper.%20Keep%20adding%20about%201/2%20cup%20of%20the%20broth-water%20mixture%20each%20time%20the%20rice%20has%20almost%20absorbed%20all%20the%20liquid.%3C/p%3E%3Cp%3E5.%20At%20about%2025%20minutes%20(once%20the%20rice%20is%20getting%20tender,%20but%20still%20has%20a%20bite%20to%20it),%20add%20the%20carrots%20and%20continue%20process%20with%20broth-water%20mixture.%3C/p%3E%3Cp%3E6.%20By%20the%20final%20broth-water%20addition,%20the%20rice%20should%20be%20al%20dente%20and%20the%20carrots%20should%20be%20tender.%20Add%20the%20zucchini%20and%20cook%205%20minutes%20more.%20(If%20broth%20mixture%20gets%20low,%20add%20water%20as%20needed.)%3C/p%3E%3Cp%3E7.%20Add%20the%20peas%20and%20asparagus%20and%20cook%202-3%20minutes%20more%20of%20until%20they%20have%20warmed%20through.%20Add%20the%20butter%20and%20cheese%20and%20stir%20briskly%20with%20a%20wooden%20spoon%20to%20emulsify%20the%20butter%20and%20cheese%20into%20the%20starchy%20liquid.%20Fold%20in%20the%20basil%20and%20taste%20for%20salt%20and%20pepper.%3C/p%3E%3Cp%3EServings%20per%20recipe:%204%3C/p%3E%3Cp%3EPer%20serving:%3C/p%3E%3Cp%3ECalories:%20380%3C/p%3E%3Cp%3EFat:%2011g%3C/p%3E%3Cp%3ESaturated%20fat:%204%20g%3C/p%3E%3Cp%3ECholesterol:%2010%20mg%3C/p%3E%3Cp%3ESodium:%20770%20mg%3C/p%3E%3Cp%3ECarbohydrates:%2064%20g%3C/p%3E%3Cp%3EFiber:%207%20g%3C/p%3E%3Cp%3ESugar:%206%20g%3C/p%3E%3Cp%3EProtein:%2010%20g%3C/p%3E){kind=link}
