Brunswick County Lemon Chess Pie

Ingredientes

  • 1 Unbaked 8" Pie Shell
  • 3 Large eggs
  • 2 Lemons
  • 1 teaspoon corn meal
  • 1 T self-rising flour
  • 1/2 stick butter
  • 1-1/4 c. sugar
  • 1 T water

Direcciones

  1. Beat large eggs till fluffy. Add in water and juice of 2 lemons and grate in appx. 1 teaspoon of lemon rind; set aside.Cream butter, sugar, corn meal and flour. Add in lemon and egg mix and mix well.
  2. Pour into unbaked pie shell and bake at 350 degrees for 30-40 min or possibly till a knife inserted in center comes out clean. (Pie will be a deep golden on top).
