.%20I%E2%80%99m%20much%20more%20of%20a%20%E2%80%98see-how-much-fun-I-had%E2%80%99%20and%20%E2%80%98look-at-all-the-yummies-I-made%E2%80%99%20kinda%20gal.%3C/p%3E%3Cp%3ESo%20it%20goes%20with%20this%20post.%3C/p%3E%3Cp%3EI%E2%80%99m%20on%20the%20sofa.%20In%20my%20pjs.%20Dying.%20Yes,%20DYING.%20I%20have%20a%20cold.%20Someone,%20and%20I%20won%E2%80%99t%20mention%20who,%20has%20been%20sneezing%20on%20me,%20and%20sniffling%20on%20me,%20and%20I%E2%80%99m%20trying%20my%20best%20not%20to%20give%20in%20to%20this%20malaise%20because%20I%20am%20just%20a%20couple%20of%20days%20away%20from%20heading%20home%20again.%3C/p%3E%3Cp%3EMy%20brother%20friend%20Nick%20Rick%20(he%E2%80%99s%20very%20protective%20of%20his%20privacy%20and%20image,%20you%20see)%20comes%20to%20me,%20laptop%20in%20hand,%20and%20asks%20%E2%80%98do%20you%20think%20these%20would%20be%20difficult%20to%20make%E2%80%99?%20I%20says,%20%E2%80%9CAside%20from%20the%20dough%20part,%20no.%E2%80%99%20And,%20no,%20we%20don%E2%80%99t%20have%20the%20equipment%20to%20make%20the%20dough%20in%20a%20machine.%20And,%20yes,%20I%20can%20figure%20out%20how%20to%20do%20it%20by%20hand.%20And%20how%20about%20these?%20Yes,%20we%20can%20do%20those%20as%20well.%20So%20off%20we%20went%20to%20the%20store%20to%20pick%20up%20a%20few%20ingredients%20needed.%20This%20recipe%20was%20adapted%20from%20my%20favorite%20foodie%20magazine%20(oh,%20we%20miss%20you%20so)%20Gourmet.%3C/p%3E%3Cp%3EThese%20were%20a%20snap%20to%20put%20together%20(even%20whilst%20dying),%20even%20using%20a%20rolling%20pin%20(my%20downfall%20in%20life),%20and%20in%20an%20ill-equipped%20kitchen!%20Two%20bites%20of%20anything%20is%20perfect,%20in%20my%20honest%20opinion.%20Serve%20some%20blue%20cheese%20dressing%20or%20buffalo%20sauce%20for%20dipping%20and%20you%E2%80%99re%20set%20for%20the%20big%20game!%3C/p%3E%3Cp%3ETruthfully,%20with%20the%20exception%20of%20the%20dough,%20he%20did%20all%20the%20work,%20baked%20them%20off,%20and%20went%20on%20merrily%20to%20a%20Super%20Bowl%20Party!%3C/p%3E%3Cp%3EThe%20recipe%20has%20the%20instructions%20for%20a%20stand%20mixer.%20I%20added%20what%20I%20did%20by%20hand%20under%20each%20step%20in%20my%20notes.%3C/p%3E%3Cp%3ENOTE:%20Could%20you%20use%20a%20rotisserie%20chicken?%20Yes.%20Next%20time%20I%20probably%20would.%20You%20could%20(GASP!)%20use%20some%20pre-made%20bread%20dough.%20But%20this%20dough%20came%20together%20quickly%20and%20easily,%20even%20by%20hand%20and%20was%20really%20lovely%20and%20pillowy%20and%20perfect,%20so%20the%20extra%20time%20was%20well%20worth%20it.%3C/p%3E%3Cp%3ETo%20make%20the%20buffalo%20chicken%20mixture,%20in%20a%20small%20bowl,%20combine%20the%20chicken,%20blue%20cheese,%20cheddar%20cheese,%20melted%20butter%20and%20hot%20sauce;%20set%20aside.%3C/p%3E%3Cp%3ENOTE:%20We%20made%20the%20stuffing%20the%20night%20before%20and%20stuck%20it%20in%20the%20fridge.%20While%20making%20the%20dough,%20took%20it%20out%20of%20the%20fridge%20and%20come%20to%20room%20temperature.%3C/p%3E%3Cp%3EHeat%20the%20milk%20and%20add%20the%202%20tablespoons%20brown%20sugar;%20stir%20the%20brown%20sugar%20into%20warm%20milk%20until%20dissolved;%20place%20in%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20the%20dough%20hook.%3C/p%3E%3Cp%3ENOTE:%20In%20doing%20this%20by%20hand,%20after%20I%20dissolved%20the%20yeast%20in%20the%20milk,%20I%20sprinkled%20the%20yeast%20on%20top%20and%20let%20it%20bloom,%20then%20went%20on%20to%20add%20the%20flour.%3C/p%3E%3Cp%3EAdd%202%201/2%20cups%20flour%20and%20yeast%20to%20the%20stand%20mixer%20and%20mix%20on%20low%20speed%20until%20a%20soft%20dough%20forms,%20adding%20up%20to%201/2%20cup%20additional%20flour,%20a%20little%20at%20a%20time,%20if%20necessary.%20Allow%20the%20dough%20to%20knead%20in%20the%20stand%20mixer%20for%205-7%20minutes.%3C/p%3E%3Cp%3ENOTE:%20I%20added%20the%20the%20flour%201/2%20cup%20at%20a%20time,%20starting%20with%20a%20wooden%20spoon%20and%20then%20my%20hands.%20From%20here,%20I%20followed%20the%20directions%20in%20the%20original%20recipe.%3C/p%3E%3Cp%3ETurn%20out%20dough%20onto%20a%20lightly%20floured%20surface%20and%20gently%20knead%20a%20few%20times%20to%20form%20a%20smooth%20ball.%20Place%20dough%20into%20a%20clean%20bowl%20that%E2%80%99s%20been%20lightly%20oiled.%20Cover%20with%20plastic%20wrap%20and%20let%20rise%20in%20a%20draft-free%20place%20at%20warm%20room%20temperature%20until%20doubled%20and%20bubbles%20appear%20on%20surface,%20about%202%20hours.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%C2%B0F%20with%20rack%20in%20the%20middle%20of%20the%20oven.%20Line%20a%20baking%20sheet%20with%20parchment%20paper;%20set%20aside.%3C/p%3E%3Cp%3ENOTE:%20So,%20if%20there%E2%80%99s%20no%20kitchen%20aide,%20you%20know%20there%E2%80%99s%20no%20parchment%20paper.%20We%20sprayed%20the%20baking%20sheet%20with%20cooking%20spray%20and%20it%20was%20fine,%20just%20a%20little%20messier%20on%20the%20clean%20up,%20which%20I%20didn%E2%80%99t%20do!%3C/p%3E%3Cp%3ETurn%20out%20dough%20onto%20a%20lightly%20floured%20surface%20and%20cut%20into%204%20equal%20pieces.%20Lightly%20dust%20your%20hands%20with%20flour,%20then%20gently%20roll%20and%20stretch%201%20piece%20of%20dough%20to%20form%20a%2012-inch-long%20rope.%20Flatten%20dough%20and%20arrange%20so%20a%20long%20side%20is%20nearest%20you,%20then%20roll%20out%20to%20a%20roughly%2012-%20by%204-inch%20rectangle%20with%20a%20lightly%20floured%20rolling%20pin.%3C/p%3E%3Cp%3ENOTE:%20Looks%20like%20the%20drawing%20from%20The%20Little%20Prince%20%E2%80%A6%20you%20know,%20the%20snake%20that%20swallowed%20the%20elephant?%3C/p%3E%3Cp%3EGently%20press%20one%20fourth%20of%20buffalo%20chicken%20mixture%20into%20lower%20third%20of%20rectangle,%20leaving%20a%201/2-inch%20border%20along%20bottom%20edge.%20Stretch%20bottom%20edge%20of%20dough%20up%20over%20filling%20and%20press%20tightly%20to%20seal,%20then%20roll%20up%20as%20tightly%20as%20possible%20to%20form%20a%20rope.%3C/p%3E%3Cp%3ENOTE:%20I%20cut%20the%20excess%20dough%20off%20in%20the%20front%20and%20on%20the%20ends.%3C/p%3E%3Cp%3ECut%20rope%20into%2012%20pieces%20and%20transfer%20to%20a%20sheet%20pan.%20Make%203%20more%20ropes%20with%20remaining%20dough,%20filling%20and%20cut%20into%20pieces,%20transferring%20to%20sheet%20pans.%20Let%20rest%20at%20room%20temperature,%20uncovered,%2030%20minutes%20(dough%20will%20rise%20slightly).%3C/p%3E%3Cp%3ENOTE:%20Okay,%20so%20I%20didn%E2%80%99t%20see%20the%20let%20them%20rest%20for%2030%20minutes%20until%20JUST%20NOW.%20But%20they%20were%20fine%20and%20rose%20while%20baking.%3C/p%3E%3Cp%3EBake%20buffalo%20chicken%20bites%20in%20the%20preheated%20oven%20for%205-7%20minutes%20or%20until%20the%20tops%20are%20lightly%20browned.%20Remove%20from%20oven%20(some%20cheese%20may%20have%20melted%20out.)%20and%20brush%20tops%20with%20melted%20butter%20before%20serving%20(optional).%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
