%20cobbler.%20I've%20loved%20the%20peaches%20and%20nectarines%20from%20Fruit%20Bat%20Produce.%20You%20can%20see%20Elaine's%20lovely%20peaches%20with%20the%20fruit%20pandowdy%20recipe%20(http://amazingdessertrecipes.blogspot.com/2009/07/summer-fruit-pandowdy.html)%20or%20the%20Magic%20Cobbler%20recipe%20(http://amazingdessertrecipes.blogspot.com/2009/08/magic-peach-cobbler.html),%20but%20today%20I'm%20just%20going%20to%20buy%20some%20of%20her%20beautiful,%20green,%20mountain%20apples.%20I%20think%20they'll%20work%20nicely%20to%20provide%20some%20texture%20to%20this%20berry%20dessert.%3C/p%3E%3Cp%3EHere%20you%20can%20see%20Elaine,%20from%20Fruit%20Bat%20Produce,%20with%20her%20wonderful%20apples,%20apple%20butter,%20figs%20and%20barely%20visible,%20her%20peaches.%20She's%20at%20the%20Meeting%20Street%20Farmer's%20Market%20near%20Ballantyne,%20Charlotte,%20NC.%3C/p%3E%3Cp%3EOne%20of%20the%20problems%20with%20cooking%20berries%20(especially%20acidic%20strawberries%20and%20raspberries)%20is%20that%20cornstarch%20doesn't%20work%20that%20well%20to%20thicken%20it.%20Flour%20can%20get%20gummy,%20and%20tapioca%20isn't%20widely%20used%20or%20available.%20To%20help%20combat%20this,%20I've%20added%20more%20cornstarch,%20but%20also%20a%20little%20hot%20water%20which%20will%20dissolve%20the%20cornstarch%20and%20get%20it%20cooking%20faster.%20The%20cobbler%20needs%20to%20come%20to%20a%20boil%20so%20that%20the%20cornstarch%20can%20thicken.%20The%20pectin%20in%20the%20apple%20will%20also%20help%20a%20little%20to%20thicken%20the%20cobbler.%20But%20this%20is%20a%20runny%20cobbler%20-%20no%20doubt%20about%20that!!%20Because%20the%20cobbler%20has%20so%20little%20fat%20in%20it,%20I've%20used%20cake%20flour,%20which%20will%20help%20keep%20it%20tender,%20and%20I'm%20also%20making%20a%20very%20soft%20dough,%20which%20will%20rise%20higher,%20make%20it%20lighter%20and%20also%20more%20tender.%20Although%20light%20on%20fat,%20it's%20still%20got%20a%20lot%20of%20calories,%20so%20if%20dieting%20is%20your%20aim,%20eat%20less%20of%20the%20sauce%20and%20have%20only%20as%20a%20special%20treat!%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20425%C2%B0F.,%20with%20an%20oven%20rack%20in%20the%20middle%20of%20the%20oven.%20Have%20ready%20a%20decorative%202-quart%20casserole%20dish.%3C/p%3E%3Cp%3ECombine%20all%20of%20the%20fruit,%20cornstarch%20and%20sugar%20in%20the%20casserole%20dish,%20and%20stir%20to%20combine.%20Let%20macerate%20while%20you%20make%20the%20cobbler%20topping.%20Just%20before%20placing%20the%20biscuits%20onto%20the%20fruit.%20stir%20in%20the%20hot%20water.%3C/p%3E%3Cp%3ETo%20make%20the%20cobbler%20batter,%20mix%20the%20cake%20flour,%20sugar,%20baking%20powder,%20baking%20soda%20and%20salt%20in%20a%20large%20bowl.%20Using%20a%20pastry%20blender%20or%20two%20knifes,%20cut%20the%20butter%20and%20shortening%20into%20the%20dry%20ingredients%20until%20the%20mixture%20looks%20like%20coarse%20meal.%20Use%20your%20fingers%20to%20break%20up%20any%20lingering%20lumps.%3C/p%3E%3Cp%3EIn%20another%20bowl,%20mix%20together%20the%20buttermilk,%20and%20vanilla%20extract.%20Make%20a%20well%20in%20the%20center%20of%20the%20flour%20mixture%20and%20pour%20in%20the%20buttermilk,%20while%20stirring%20with%20a%20fork%20and%20to%20make%20a%20mixture%20that%20looks%20like%20cottage%20cheese.%3C/p%3E%3Cp%3EPlace%20a%20thick%20sprinkling%20of%20the%20bleached%20flour%20on%20a%20plate.%20Using%20an%20ice%20cream%20scoop,%20scoop%20up%20a%20ball%20of%20dough%20and%20place%20it%20on%20the%20floured%20plate.%20Sprinkle%20the%20top%20liberally%20with%20some%20of%20the%20flour.%3C/p%3E%3Cp%3EFlour%20your%20hands,%20pick%20up%20a%20dough%20ball,%20and%20rock%20it%20side%20to%20side%20in%20your%20hands%20to%20both%20coat%20it%20with%20flour,%20and%20knock%20off%20any%20excess.%20Gently%20transfer%20it%20to%20the%20top%20of%20the%20fruit.%20Flatten%20it%20slightly.%20Continue%20shaping%20and%20placing%20the%20biscuits%20until%20the%20whole%20top%20is%20covered.%3C/p%3E%3Cp%3EBake%20for%2020%20minutes.%20Remove%20the%20cobbler%20from%20the%20oven%20and%20lightly%20brush%20the%20top%20of%20the%20biscuits%20with%20some%20of%20the%20skim%20milk,%20using%20just%20enough%20to%20moisten%20the%20tops%20and%20brush%20away%20any%20residual%20flour.%20Sprinkle%20lightly%20with%20the%20sugar.%20Return%20the%20cobbler%20to%20the%20oven%20and%20cook%20another%205-10%20minutes%20until%20the%20biscuits%20are%20crisp%20and%20dry%20and%20the%20juices%20are%20bubbling%20up.%20The%20juices%20must%20be%20bubbling%20or%20the%20cornstarch%20will%20not%20thicken%20the%20berries%20and%20the%20filling%20will%20be%20too%20runny.%20Remove%20it%20from%20the%20oven%20and%20cool%20on%20a%20wire%20rack%20for%20at%20least%2030%20minutes.%20Eat%20the%20cobbler%20while%20still%20warm.%20The%20cobbler%20can%20be%20made%201%20day%20ahead%20and%20stored%20in%20the%20refrigerator.%20Cover%20with%20foil%20and%20bake%20at%20350%C2%B0F.%20for%20about%2015%20minutes.%20Uncover%20and%20cook%20another%205-10%20minu
