%20in%20just%2030%20minutes%20but%20the%20inside%20required%20longer%20baking.%20%20For%20the%20novice%20baker,%20this%20could%20be%20problem%20as%20the%20rolls%20looked%20done.%20%20Fortunately%20the%20recipe%20instructed%20me%20to%20test%20the%20internal%20temperature%20to%20195-200F.%20%20Perhaps%20the%20oven%20temperature%20should%20be%20reduced%20to%20350F%20to%20allow%20for%20evenly%20baked%20rolls.%3C/p%3E%3Cp%3EThe%20end%20result%20was%20a%20dense%20but%20very%20tasty%20roll,%20especially%20when%20eaten%20hot%20out%20of%20the%20oven%20with%20salted%20butter%20and%20honey!%20%20%20I%20would%20bake%20them%20again,%20with%20slight%20adjustments%20in%20oven%20temperature,%20and%20I%E2%80%99m%20looking%20forward%20to%20toasting%20the%20leftover%20rolls%20in%20the%20morning%20for%20breakfast.%3C/p%3E%3Cp%3EFor%20accuracy,%20most%20ingredients%20were%20measured%20on%20my%20nifty%20scale.%20%20According%20to%20my%20scale:%20%20800g%20of%20Gold%20Medal%20unbleached%20all-purpose%20flour%20when%20scooped%20into%20cups%20equaled%206%201/2%20cups%20(I%20measured%20it%20twice).%20%20Here%20I%20was%20curious%20to%20see%20how%20much%20the%20yeasted%20dough%20weighed.%20%201.398kg%20translates%20to%20a%20little%20over%203lbs%20of%20dough!%3C/p%3E%3Cp%3EAnd%20each%20individual%20roll%20weighed%20116%20grams%20before%20being%20baked.%20%20Don%E2%80%99t%20you%20just%20love%20the%20black%20and%20white%20flecks?%20%20Delicate%20but%20distinctive!%3C/p%3E%3Cp%3EI%20have%20never%20measured%20the%20internal%20temperature%20of%20bread%20as%20I%20have%20measured%20a%20medium%20rare%20steak,%20but%20I%E2%80%99m%20glad%20I%20did!%20%20The%20top%20was%20a%20deep%20brown%20after%2030%20minutes%20and%20it%20looked%20done.%20%20I%20tented%20it%20with%20foil%20and%20let%20it%20bake%20for%20another%2015%20minutes,%20taking%20the%20temperature%20every%205%20minutes,%20until%20the%20rolls%20measured%20195F%20and%20my%20thermometer%20stick%20came%20out%20clean.%3C/p%3E%3Cp%3EButtermilk%20dinner%20rolls%20from%20Michael%20Ruhlman%3C/p%3E%3Cp%3EUpdate:%20%20Michael%20Ruhlman%20suggested%20that%20I%20reduce%20the%20amount%20of%20flour%20to%2025%20ounces/700g%20all%20purpose%20flour%20for%20less%20dense%20rolls.%20%20The%20original%20measure%20posted%20was%2028%20ounces/800%20grams%20all%20purpose%20flour.%3C/p%3E%3Cp%3ECombine%20the%20flour%20and%20instant%20yeast%20in%20the%20bowl%20of%20a%20standing%20mixer.%20Let%20sit%20for%2030%20seconds%20and%20then%20add%20the%20buttermilk,%20salt%20and%20honey.%20%20Mix%20on%20medium%20until%20the%20dough%20is%20smooth%20and%20elastic,%20about%2010%20minutes.%20%20I%20let%20the%20machine%20mix%20for%205%20minutes%20and%20hand%20kneaded%20for%20another%205%20minutes%20to%20ensure%20that%20the%20dough%20was%20smooth.%20(See%20Michael%E2%80%99s%20post%20on%20Bread%20Baking%20Basics%20for%20more%20info%20on%20mixing%20and%20rising.)%3C/p%3E%3Cp%3EPlace%20about%201%20tablespoon%20oil%20in%20a%20large%20bowl.%20Put%20dough%20in%20the%20bowl%20and%20flip%20it%20over%20so%20that%20the%20dough%20is%20completely%20covered%20with%20a%20thin%20coat%20of%20oil.%20Cover%20the%20bowl%20with%20a%20clean%20kitchen%20towel.%20During%20the%20winter,%20I%20place%20my%20dough%20in%20my%20oven%20so%20that%20it%20rises%20easily.%20Turn%20your%20oven%20on%20to%20the%20lowest%20setting%20for%20a%20minute%20so%20that%20it%20warms%20up%20just%20a%20little.%20Turn%20the%20oven%20off%20and%20place%20the%20dough%20on%20a%20rack.%20Close%20the%20oven%20door%20and%20allow%20the%20dough%20to%20rise%20until%20doubled%20in%20volume%20(dough%20shouldn%E2%80%99t%20bounce%20back%20when%20you%20press%20a%20finger%20into%20it).%20%20This%20will%20take%20about%20an%20hour%20in%20a%2090%C2%BAF%20oven%20or%20at%20least%20two%20hours,%20maybe%20three%20if%20rising%20on%20the%20kitchen%20counter.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20your%20counter%20and%20give%20it%20a%20good%20knead.%20%20Divide%20the%20dough%20into%2012%20equal%20portions%20(about%20116g,%204%20ounces%20each).%20%20Form%20each%20into%20a%20tight%20boule%20by%20rolling%20it%20on%20the%20counter.%20%20Grease%20a%20springform%20pan%20with%20olive%20oil,%20spray%20or%20butter.%20%20Fit%20the%20boules%20snugly%20into%20it,%20cover%20with%20a%20towel%20and%20let%20the%20dough%20rise%20for%2045%20minutes%20to%20an%20hour%20in%20the%20oven,%20as%20instructed%20above.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20375F%20/190C.%20%20Whisk%20the%20egg%20and%20water%20until%20it%E2%80%99s%20uniformly%20yellow.%20When%20the%20rolls%20have%20risen%20again,%20brush%20them%20with%20the%20egg%20wash%20and%20sprinkle%20them%20with%20sesame%20seeds%20or%20poppy%20seeds.%20Bake%20them%20for%2040%20minutes%20(to%20an%20internal%20temperature%20of%20195-200F/90-93C.%20%20Check%20after%2030%20minutes%20and%20tent%20with%20foil%20if%20the%20rolls%20are%20getting%20very%20dark.%20Let%20them%20rest%20on%20a%20rack%20for%20about%2010%20minutes%20before%20serving.%3C/p%3E%3Cp%3EThese%20rolls%
