Buttermilk Oatmeal Berry Muffins

Ingredientes

  • 1 c. plus 2 Tbsp. rolled oats
  • 1 c. buttermilk
  • 1 Tbsp. vanilla
  • 1 c. flour
  • 1 Tbsp. baking pwdr
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/4 c. walnuts, finely minced, optional
  • 1 x egg
  • 3/4 c. light brown sugar, firmly packed
  • 1/4 c. unsalted butter, softened
  • 1 1/3 c. berries

Direcciones

  1. Generously butter 18 large muffin tins. Place on rack in center of oven.
  2. Preheat oven to 400 degrees. Blend oats, buttermilk and vanilla in a medium bowl and set aside. Combine egg and brown sugar in large bowl; blend well.
  3. Add in butter and beat for 1 minute. Add in buttermilk mix and blend in well.
  4. Add in dry ingredients and blend till flour is just incorporated; don't overmix. Mix in berries. Fill muffin tins half full; bake till muffins are lightly browned, about 15 to 20 min. Turn out onto rack to cold.
  5. Makes18 muffins.
