%3C/p%3E%3Cp%3EWe%20interrupt%20this%20spree%20of%20vegan%20holiday%20baking%20to%20kill%20two%20birds%20with%20one%20stone.%20Well,%20maybe%20not%20the%20best%20metaphor%20for%20a%20vegan%20website,%20but%20I'll%20run%20with%20it%20nonetheless.%3C/p%3E%3Cp%3EGreg%20was%20a%20bit%20under%20weather%20this%20week.%20Fortunately,%20not%20H1N1%20or%20other%20seasonal%20flu%20under%20weather,%20but%20more%20like%20day-long%20stomach%20discomfort%20that%20knocked%20him%20out.%20As%20the%20day%20went%20on%20and%20Greg%20was%20feeling%20better,%20I%20realized%20fairly%20quickly%20that%20he%20would%20need%20to%20eat%20something%20that%20was%20%22real%20food%22%20without%20sending%20his%20stomach%20back%20into%20a%20downward%20spiral.%3C/p%3E%3Cp%3EI%20poked%20around%20the%20kitchen%20and%20found%20another%20trusty%20butternut%20squash.%20Yes,%20I've%20been%20buying%20these%20up%20at%20probably%20too%20great%20a%20clip,%20but%20I%20just%20can't%20say%20no%201)%20to%20tasty%20seasonal%20food%20and%202)%20a%20sale.%20I%20was%20wondering%20if%20I%20could%20turn%20this%20bulbous%20beast%20into%20a%20tasty%20soup,%20and%20after%20some%20poking%20around,%20I%20found%20a%20recipe%20from%20Weight%20Watchers%20for%20curried%20butternut%20soup,%20so%20I%20gave%20it%20a%20shot.%3C/p%3E%3Cp%3EAfter%20making%20this%20soup,%20I%20think%20this%20is%20a%20new%20favorite%20that%20will%20be%20in%20the%20rotation.%20First,%20for%20those%20that%20are%20a%20little%20unsure%20of%20curry,%20let%20me%20say%20that%20you%20can't%20actually%20taste%20curry%20in%20the%20final%20product,%20and%20the%20soup%20doesn't%20get%20spicy%20when%20you%20add%20it.%20Instead,%20the%20toasted%20curry%20powder%20adds%20a%20depth%20of%20flavor%20that%20gives%20the%20soup%20body,%20but%20you%20can't%20put%20your%20finger%20on%20what%20that%20ingredient%20is,%20so%20I%20would%20definitely%20recommend%20you%20try%20it.%20Second,%20once%20you%20prep%20the%20vegetables,%20this%20soup%20just%20cooks%20itself.%20That%20is%20definitely%20a%20big%20thumbs%20up%20here;%20anything%20that%20tends%20to%20itself%20is%20a%20friend%20of%20mine.%20Finally,%20you%20can%20easily%20make%20this%20ahead%20of%20time%20and%20reheat%20it.%20Greg%20and%20I%20had%20some%20of%20the%20leftovers%20later,%20and%20it%20was%20still%20delicious.%3C/p%3E%3Cp%3EAnd,%20I%20am%20pleased%20to%20report%20that%20the%20soup%20did%20the%20trick%20for%20curing%20Greg,%20on%20many%20levels.%20While%20the%20vegetables%20were%20roasting,%20Greg%20perked%20up%20at%20the%20smell.%20I%20brought%20him%20the%20soup,%20and%20he%20sat%20up%20and%20slurped%20it%20down,%20and%20then%20had%20seconds!%20He%20said%20it%20was%20delicious%20and%20felt%20comforted,%20which%20are%20all%20important%20things.%3C/p%3E%3Cp%3EOn%20a%20final%20note,%20maybe%20what%20%22ails%20you%22%20isn't%20sickness,%20but%20figuring%20out%20what%20to%20bring%20for%20Thanksgiving.%20This%20dish%20would%20be%20great.%20It%20is%20easy%20to%20make%20ahead%20of%20time%20and%20can%20either%20stay%20warm%20in%20a%20slow%20cooker%20or%20be%20quickly%20reheated%20on%20the%20stove.%20It's%20festive%20for%20the%20season%20and%20easy%20to%20handle,%20either%20if%20you're%20the%20host%20or%20bringing%20a%20dish%20along.%20Two%20thumbs%20up%20from%20our%20house!%3C/p%3E%3Cp%3E1)%20Put%20squash%20and%20onion%20in%20a%20roasting%20pan.%20Cover%20with%20the%20vegetable%20stock.%20Place%20in%20preheated%20425%20degree%20oven%20for%20one%20hour,%20stirring%20occasionally.%20(If%20some%20of%20the%20vegetables%20brown,%20don't%20worry.).%3C/p%3E%3Cp%3E2)%20Remove%20vegetables%20from%20oven%20and%20puree.%20If%20you%20are%20using%20an%20immersion%20blender,%20cool%20for%20about%20five%20minutes%20and%20then%20puree%20until%20smooth.%20If%20you%20are%20using%20a%20regular%20blender%20or%20a%20food%20processor,%20cool%20for%20about%2015%20minutes%20so%20you%20don't%20hurt%20yourself%20with%20ridiculously%20hot%20vegetables%20and%20puree%20in%20batches.%3C/p%3E%3Cp%3E3)%20Toast%20the%20curry%20powder%20in%20a%20nonstick%20pan%20on%20the%20stove%20at%20medium%20high%20heat%20for%20about%20two%20minutes.%20Stir%20continuously%20so%20the%20powder%20doesn't%20burn.%3C/p%3E%3Cp%3E4)%20Mix%20the%20curry%20powder%20and%20a%20couple%20cracks%20of%20salt%20and%20pepper%20into%20soup.%3C/p%3E%3Cp%3EServe!%3C/p%3E){kind=link}
