,%20mustard%20greens,%20brown%20rice,%20limes,%20sweet%20potatoes,%20cucumbers,%20okra,%20peaches,%20white%20button%20mushrooms,%20and%20fresh%20basil.%3C/p%3E%3Cp%3ESteam%20the%20cubed%20squash%20for%20about%2030-45%20minutes,%20or%20until%20soft.%20Set%20aside.%3C/p%3E%3Cp%3EOn%20medium%20heat,%20saute%20the%20onion%20&%20garlic%20in%20a%20little%20water%20until%20translucent.%20%20Add%20wine%20and%20cook%20~5%20minutes.%20%20Add%20the%20barley%20&%20water/broth.%20Bring%20to%20boil.%20Cover%20and%20simmer%20for%201-1%201/4%20hours%20until%20the%20barley%20is%20mostly%20soft%20(still%20chewy).%3C/p%3E%3Cp%3EMash%20up%20the%20steamed%20squash%20with:%20almond%20milk,%202%20tbsp%20nutritional%20yeast,%20sage,%20curry%20&%20nutmeg.%20When%20almost%20all%20the%20water%20is%20absorbed%20by%20the%20barley%20(there%20can%20still%20be%20some%20left,%20it%20will%20make%20it%20creamier),%20add%20the%20mashed%20squash%20&%20tomatoes,%20and%20mix%20well.%20%20Add%202%20tbsp%20more%20nutritional%20yeast%20and%20salt/pepper%20to%20taste.%20Cook%20another%205%20minutes.%3C/p%3E%3Cp%3EYesterday,%20we%20wanted%20pizza%20and%20I%20wanted%20to%20use%20up%20these%20awesome%20sprouted%20grain%20tortillas%20we%20had%20(you%20should%20freeze%20them%20if%20you're%20not%20going%20to%20use%20them%20within%20a%20couple%20of%20days):%3C/p%3E%3Cp%3ESo%20I%20laid%20out%202%20tortillas%20on%20parchment%20paper%20on%20a%20baking%20sheet%20and%20spread%20some%20of%20my%20tomato%20sauce%20on%20it%20(pureed%20tomatoes,%20minced%20garlic,%20onion%20powder,%20oregano,%20salt,%20and%20red%20pepper%20flakes),%20followed%20by%20sliced%20peppers,%20mushrooms,%20onions%20and%20fresh%20basil%20&%20chard.%20I%20sprinkled%20on%20some%20Daiya%20mozzarella%20shreds%20and%20topped%20with%20a%20little%20more%20sauce.%20%20Put%20them%20in%20the%20oven%20for%20about%2010%20minutes%20on%20375%20or%20so.%20%20They%20do%20get%20a%20bit%20soggy%20in%20the%20middle,%20whereas%20the%20outer%20edges%20are%20VERY%20crispy.%20%20You%20could%20try%20spraying%20the%20bottom%20of%20the%20tortillas%20with%20oil%20before%20you%20put%20it%20on%20the%20parchment%20paper%20(I%20didn't).%20%20They%20were%20pretty%20darn%20good!%3C/p%3E%3Cp%3ENext%20up,%20a%20Tafajito:%3C/p%3E%3Cp%3EThinly%20slice%20up%20red%20&%20green%20bell%20peppers%20and%20onions.%20%20Saute%20the%20onions%20in%20a%20pan%20on%20medium%20heat%20with%20a%20little%20water.%20%20Let%20the%20water%20run%20out%20and%20continue%20dry-frying%20them.%20%20They%20will%20start%20to%20burn.%20Keep%20mixing%20them%20every%20few%20seconds%20while%20they%20burn.%20%20After%20doing%20this%20for%20a%20minute%20or%20two,%20add%20in%20a%20little%20water.%20%20It%20will%20sizzle,%20so%20WATCH%20OUT!%20%20Then%20add%20the%20peppers.%20%20Do%20the%20same%20thing....let%20the%20water%20run%20out,%20dry%20fry%20them.%20Let%20them%20burn.%20As%20you%20mix,%20add%20in%20some%20cumin%20powder/seeds,%20coriander%20powder,%20chili%20powder,%20black%20pepper,%20and%20salt.%20%20%20Finally,%20add%20in%20a%20little%20water%20and%20let%20sizzle%20again.%20%20Turn%20off%20the%20heat.%3C/p%3E%3Cp%3ELay%20out%202%20sprouted%20grain%20tortillas.%20%20Spread%20guacamole%20on%20them.%20Then,%20spread%20on%20some%20of%20Ani%20Phyo's%20%22Taco%20Nut%20Meat%22%20(awesome%20stuff!),%20then%20the%20veggies.%20%20Wrap%20how%20you%20want...taco%20style,%20burrito%20style,%20fajita%20style.....it's%20up%20to%20you!%3C/p%3E%3Cp%3EThen%20I%20tried%20to%20make%20Ani's%20Basic%20Flax%20Crackers%20from%20Ani's%20Raw%20Food%20Essentials.%20%20I%20think%20they%20were%20way%20too%20thick...I%20should've%20spread%20them%20on%202%20baking%20sheets.%20%20They%20never%20really%20crisped%20up%20except%20for%20a%20few%20edge%20pieces.%20%20I%20baked%20them%20on%20300%20degrees%20for%20at%20least%2045%20minutes%20per%20side.%20Still%20good%20though.%20%20I%20added%20garlic%20powder%20&%20onion%20powder.%20Note%20to%20self:%20buy%20Excalibur%20Dehydrator,%20when%20I%20can%20afford%20it%20and%20have%20space!%3C/p%3E%3Cp%3ESince%20I%20still%20had%20plenty%20of%20butternut%20squash,%20I%20decided%20to%20make%20the%20Curried%20Butternut%20and%20Red%20Lentil%20Soup%20with%20Chard%20from%20Robin%20Robertson's%20%221,000%20Vegan%20Recipes%22.%20Delicious!!%20I%20left%20out%20the%20oil%20and%20used%20pureed%20tomatoes%20from%20a%20jar,%20instead%20of%20the%20crushed.%3C/p%3E%3Cp%3EOther%20stuff%20I've%20been%20eating:%3C/p%3E%3Cp%3EMy%20black%20bean%20burgers%20with%20BBQ%20sauce%20and%20a%20side%20of%20my%20mashed%20potatoes(mash%20up%20some%20cooked%20potatoes,%20add%20a%20little%20almond%20milk,%20garlic%20powder,%20black%20pepper,%20onion%20powder,%20nutritional%20yeast,%20and%20Creole%20Seasoning)%3C/p%3E%3Cp%3EI%20tried%20a%20Gardein%20product%20for%20the%20first%20time%20and%20it%20was%20really%20tasty.%20I%20try%20not%20to%20eat/buy%20too%20much%20in%20the%20way%20of%20pre-packaged%20foods,%20but%20I%20had%20a%20coupon%20and%20finally%20broke%20down%20and%20went%2
