Buttery Cranberry Barley Pilaf

Ingredientes

  • 1/4 c. butter
  • 1 c. minced peeled onion
  • 2 x celery ribs, trimmed and sliced
  • 1 x clove garlic, crushed
  • 1 c. barley
  • 3 c. chicken broth
  • 1 c. minced cranberries
  • 1 Tbsp. honey
  • 1/2 c. minced pecans

Direcciones

  1. Heat butter in a large saucepan over medium heat till melted.
  2. Add in onion, celery and garlic. Cook for about 5 min, or possibly till the onion is tender, stirring occasionally.
  3. Add in barley and continue cooking about 5 min, or possibly till the barley is golden brown, stirring constantly. Add in chicken broth and bring to a boil. Reduce the heat, cover, and simmer for 35 min.
  4. Stir in cranberries and honey. Simmer for 10 min, or possibly till the barley is tender. Remove from the heat and let stand covered for 5 min. Stir in pecans and serve.
