,%20in%20the%20hopes%20that%20they%20would%20feed%20my%20craving.%20These%20chicken%20filets%20are%20nice%20and%20tender,%20and%20the%20cornmeal%20makes%20for%20a%20bit%20of%20a%20lighter%20breading.%3C/p%3E%3Cp%3EThe%20sandwiches%20were%20very%20good,%20although%20I%20have%20to%20admit,%20I%20didn't%20notice%20a%20huge%20difference%20between%20these%20sandwiches%20and%20the%20oven-fried%20chicken%20sandwiches%20that%20I%20make.%20So%20those%20are%20a%20good%20lower-fat%20alternative.%20(Just%20dump%20some%20Cajun%20seasoning%20into%20that%20breading%20mixture.)%3C/p%3E%3Cp%3EBecause%20I%20already%20had%20some%20oil%20heated,%20I%20decided%20to%20try%20my%20hand%20at%20some%20last-minute%20homemade%20onion%20rings%20to%20go%20with%20the%20sandwiches.%20I%20make%20good%20onion%20rings%20(first%20time's%20a%20charm!).%20Next%20time%20I'll%20pay%20attention%20to%20what%20I%20did,%20because%20those%20were%20darn%20good.%3C/p%3E%3Cp%3EAnd%20also,%20some%20awards!%20The%20first%20is%20from%20Geri%20at%20Heart%20N%20Soul%20Cooking,%20which%20is%20one%20of%20my%20new%20favorite%20blogs%20to%20read.%20(I%20love%20blogs%20where%20I%20actually%20want%20to%20make%20the%20food%20that%20I%20read%20about.)%3C/p%3E%3Cp%3EI'm%20supposed%20to%20share%20seven%20things%20about%20myself%20that%20I%20haven't%20shared%20yet.%20Which%20is%20tough,%20because%20I%20share.%20I%20share%20a%20lot.%20But%20here%20goes:%3C/p%3E%3Cp%3EI%20know%20all%20the%20words%20to%20almost%20every%20Queen%20or%20Guess%20Who%20song%20that%20was%20ever%20released.%3C/p%3E%3Cp%3EI%20had%20long%20hair%20in%20high%20school,%20until%20it%20got%20caught%20in%20the%20vacuum%20cleaner.%20I%20haven't%20been%20able%20to%20take%20the%20risk%20again.%3C/p%3E%3Cp%3EWhen%20I%20was%20in%20elementary%20school%20and%20junior%20high,%20I%20didn't%20like%20cereal%20for%20breakfast.%20Instead,%20I'd%20fix%20myself%20a%20huge%20plate%20of%20spaghetti,%20or%20maybe%20a%20couple%20of%20hot%20roast%20beef%20sandwiches%20with%20gravy.%20Just%20to%20get%20me%20through%20'til%20lunch.%3C/p%3E%3Cp%3EThe%20hubby%20and%20I%20have%20an%20entire%20large%20closet%20packed%20with%20comic%20books.%20And%20between%20the%20two%20of%20us,%20we've%20read%20them%20all.%3C/p%3E%3Cp%3EI'm%20terrified%20of%20dolls,%20the%20circus,%20and%20anyone%20wearing%20a%20mask.%20Oh,%20and%20Tim%20Burton%20movies.%3C/p%3E%3Cp%3EI%20have%20a%20lot%20of%20random%20health%20issues,%20such%20as%20narcolepsy%20and%20hypoglycemia,%20and%20I%20don't%20lways%20stay%20conscious%20when%20I%20should.%20Also,%20I'm%20legally%20deaf,%20which%20most%20people%20don't%20realize,%20so%20they%20usually%20just%20think%20I'm%20either%20rude%20or%20not%20paying%20attention.%20(Although%20sometimes%20that%20IS%20the%20case.)%3C/p%3E%3Cp%3EI%20love%20convenience%20store%20hot%20dogs.%20Doesn't%20matter%20how%20long%20they've%20been%20sitting%20there.%20They're%20perfect%20with%20a%20side%20of%20chips%20and%20some%20jerky.%3C/p%3E%3Cp%3EI%20would%20like%20to%20pass%20this%20award%20on%20to%20the%20following%20bloggers%20(and%20I%20apologize%20if%20this%20award%20is%20a%20repeat%20to%20anyone,%20but%20it's%20tough%20to%20keep%20track):%3C/p%3E%3Cp%3EThe%20second%20award%20is%20from%20Sophie%20at%20Sophie's%20Foodiefiles,%20a%20longtime%20favorite%20of%20mine.%3C/p%3E%3Cp%3E(And%20Sophie,%20you%20might%20need%20to%20help%20me%20out%20with%20the%20translation.%20The%20Internet%20is%20being%20unusually%20unhelpful%20with%20this%20matter.)%20I'd%20like%20to%20pass%20this%20on%20to%20the%20following%20bloggers,%20who%20seem%20to%20teach%20me%20a%20lot%20about%20new%20foods%20and%20how%20to%20use%20them:%3C/p%3E%3Cp%3EThanks%20again%20to%20both%20Geri%20and%20Sophie!%3C/p%3E%3Cp%3ECajun%20Cornmeal%20Fried%20Chicken%3C/p%3E%3Cp%3EServes%204%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20350%20degrees.%3C/p%3E%3Cp%3E2.%20In%20a%20medium%20bowl,%20whisk%201/2%20c.%20flour%20with%20the%20cornmeal,%20Cajun%20spice,%20and%20salt.%20Place%20in%20a%20shallow%20dish.%20Put%20the%20remaining%201%20c.%20flour%20and%20buttermilk%20each%20in%20a%20shallow%20dish.%20Season%20the%20buttermilk%20with%20hot%20sauce,%20to%20taste.%3C/p%3E%3Cp%3E3.%20Use%20a%20meat%20mallet%20or%20rolling%20pin%20to%20pound%20out%20the%20chicken%20breasts%20to%20uniform%20thickness.%20(I%20actually%20just%20cut%20mine%20in%20half%20because%20it%20was%20nap%20time.)%20Pat%20the%20chicken%20breasts%20dry%20and%20season%20with%20salt.%3C/p%3E%3Cp%3E4.%20Lightly%20coat%20each%20piece%20of%20chicken%20in%20flour%20and%20shake%20off%20any%20excess.%20Dip%20them%20in%20the%20buttermilk,%20and%20then%20dredge%20them%20in%20the%20cornmeal%20mixture.%20Shake%20off%20any%20excess%20coating.%3C/p%3E%3Cp%3E5.%20Heat%20a%20large%20cast%20iron%20skillet%20over%20medium%20heat%20with%20about%201/2%22%20of%20oil.%20Add%20the%20chicken%20and%20cook,%20until%20golden%20brown,%20about%203%20to%204%20minutes%20on%20each%20side.%3C/p%3E%3Cp%3E6.%20Place%20the%20chicken%20on%20a%20rack%20over%20a%20baking%20pan%20and%20bake%20until%20firm%20to%20the%20touch,%20about%2015%20minutes.%20Season%20with%20salt%20to%20taste,%20and%20serve%20immediately.%3C/p%3E){kind=link}
