- Roll 1 pastry sheet into a 15 x 12 inch rectangle on a surface lightly sprinkled with cornmeal. Cut into 3 inch squares. Cut sausage into 1/4 inch slices, and cut each slice in half, crosswise. Place 1 piece of sausage and 1 jalapeno slice in center of each square. Fold corners to center, slightly overlapping edges.
- Place filled pastries, seam side down, on greased baking sheets sprinkled with cornmeal. Repeat procedure with remaining pastry, sausage, and jalapeno peppers. Bake in a preheated 400 degree oven for 12-15 min.
- Serve immediately.
- Yield: 40 appetizer servings.
- NOTES : Unbaked Cajun Warm Puffs may be frzn up to three months. Let thaw, and bake according to directions.
