Ingredientes

  • 1 tsp salt
  • 1 tsp chopped fresh thyme
  • 1/2 tsp dry oregano
  • 1/2 tsp cayenne pepper
  • 1/2 tsp sweet paprika
  • 1/2 tsp freshly-grnd black pepper
  • 1/2 tsp fennel seeds crushed
  • 4 x halibut fillets - (6 ounce ea)
  • 2 Tbsp. extra virgin olive oil
  • 4 tsp butter

Direcciones

  1. Preheat oven to 400 degrees. Mix first 7 ingredients in small bowl. Place fillets on baking sheet. Brush on both sides with 1 Tbsp. oil. Sprinkle top of each with seasoning.
  2. Heat heavy large skillet (preferably cast-iron) over high heat till very warm. Add in remaining 1 Tbsp. oil; swirl to coat. Place fillets, seasoned-side down, in skillet. Cook till very brown on bottom, 1 minute. Return fillets, browned-side up, to baking sheet. Place in oven; bake till just opaque in center, about 8 min. Top each with 1 tsp. butter.
  3. This recipe yields 4 servings.
  4. Comments: A nod to what could arguably be the dish of the eighties, blackened redfish. The technique works equally well with halibut.
