- During the war years, England had a shortage of pork. They imported side bacon from Canada, that is termed "Wilshire Sides" in England, and they smoked it.
- Canadian bacon then became famous due to this event. Over time the United States believed which Canadian Bacon was Smoked Back Bacon. Canadian Bacon has never been smoked in Canada (although some small Provincial providers do smoke this bacon). Today in the U.S. bacon from Canada is known as smoked back bacon.
