Ingredientes

  • 1 lb Maytag Blue Cheese crumbled
  • 1 c. toasted walnut pcs
  • 1/4 c. heavy cream Salt to taste Freshly-grnd white pepper to taste
  • 2 Tbsp. extra virgin olive oil
  • 1 c. thinly-sliced onions
  • 1 c. julienned Granny Smith apples Rice wine vinegar to taste
  • 24 x French bread rounds - (2" by 1/4") toasted Fresh parsley for garnish

Direcciones

  1. In a food processor, fitted with a metal blade, combine the cheese, walnuts and cream. Puree till smooth. Season with salt and pepper.
  2. In a small saute/fry pan, over medium heat, add in the oil. When the oil is warm, add in the onions and apples. Season with salt and pepper. Saute/fry till caramelized, about 6 to 8 min. Remove from the heat. Stir in the vinegar to taste and cold completely.
  3. Spread a heaping spoonful of the cheese mix over each toasted round of French bread. Garnish with a small pile of the apple-onion mix and parsley.
  4. This recipe yields 24 servings.
