%20don't%20remember%20the%20annual%20pruning,%20so%20the%20apples%20aren't%20pictures%20of%20beauty.%20They%20are%20scabby%20and%20knobby%20and%20you%20don't%20just%20brush%20them%20up%20on%20your%20shirt%20and%20take%20a%20bite%20after%20eyeballing%20some%20of%20the%20unappealing%20peel.%20But%20they%20do%20taste%20nicely%20tart-sweet%20and%20are%20wonderfully%20crisp.%3C/p%3E%3Cp%3EMy%20weekend%20was%20filled%20with%20the%20task%20of%20making%20applesauce,%20apple%20crisp%20and%20a%20velvety%20brown%20apple%20chutney.%20Peeling%20and%20excising%20out%20cores%20and%20inhabitants%20from%20these%20knobby%20apples%20takes%20a%20long%20time,%20so%20I%20didn't%20put%20up%20huge%20vats%20of%20apple%20products,%20but%20I%20did%20manage%20to%20get%20four%20containers%20of%20applesauce,%201%209x13%20pan%20of%20apple%20crisp%20and%207%20pints%20of%20chutney%20using%20the%20contents%20of%20only%20one%20tree.%20With%20five%20more%20trees%20to%20harvest,%20I%20am%20thinking%20that%20my%20horse%20and%20donkey%20owning%20neighbor%20is%20going%20to%20get%20a%20bushel%20of%20equine%20treats%20in%20the%20next%20week.%3C/p%3E%3Cp%3EChutney%20is%20the%20perfect%20accompaniment%20for%20spicy%20food,%20rice%20dishes%20and%20we%20love%20a%20bit%20of%20chutney%20and%20cucumber%20raita%20on%20the%20side%20of%20our%20Bhajis.%20It%20is%20also%20luscious%20mixed%20with%20sour%20cream%20for%20a%20quick%20dip%20or%20with%20cream%20cheese%20and%20curry%20powder%20for%20a%20stiffer%20spread.%20I%20tweaked%20the%20apple%20chutney%20recipe%20in%20my%20Ball%20Blue%20Book%20canning%20recipes%20cookbook%20and%20here%20it%20is:%3C/p%3E%3Cp%3EClean%207%20pint%20canning%20jars%20and%20lids.%20Place%20in%20canning%20kettle%20and%20bring%20to%20boil.%20Cover%20and%20keep%20warm%20while%20making%20chutney.%3C/p%3E%3Cp%3EPlace%20all%20ingredients%20in%20a%20large,%20heavy-bottomed%20pot%20and%20mix%20well%20to%20dissolve%20brown%20sugar.%20Place%20on%20stove%20and%20bring%20to%20a%20boil.%20Lower%20heat%20and%20simmer,%20uncovered,%201%20hour%20and%2015%20minutes,%20stirring%20often%20to%20keep%20from%20scorching.%20You%20want%20your%20chutney%20to%20be%20nice%20and%20thick%20and%20not%20runny,%20so%20you%20may%20have%20to%20extend%20your%20cooking%20time%20if%20your%20apples%20are%20particularly%20juicy,%20as%20I%20did.%3C/p%3E%3Cp%3EPack%20into%20hot%20pint%20jars,%20leaving%201/4%20inch%20headspace.%20Seal%20and%20adjust%20rings.%20Place%20back%20in%20hot%20water%20bath%20and%20process%2010%20minutes%20once%20water%20has%20come%20to%20a%20boil%20again.%3C/p%3E%3Cp%3EMakes%207%20glorious%20pints%20of%20chutney.%3C/p%3E%3Cp%3EI%20have%20also%20made%20this%20apple%20chutney%20with%20fresh%20cranberries,%20cut%20in%20half%20and%20that%20is%20a%20lovely%20holiday%20addition.%3C/p%3E%3Cp%3EI%20am%20submitting%20this%20recipe%20to%20the%20Slow%20Food%20Edition%20of%20the%20Go%20Ahead,%20Honey,%20It's%20Gluten%20Free%20cooking%20event%20founded%20and%20hosted%20this%20month%20by%20Naomi%20at%20Straight%20Into%20Bed%20Cakefree%20and%20Dried.%20This%20thematic%20event%20showcases%20gluten-free%20goodies%20and%20I'm%20excited%20to%20see%20what%20slow-cooked%20treats%20everyone%20cooks%20up%20this%20round,%20which%20runs%20until%20September%2030th.%20Be%20sure%20to%20check%20back%20with%20Naomi%20for%20a%20luxurious%20and%20delicious%20roundup.%3C/p%3E){kind=link}
