Ingredientes

  • 4 c. Sugar
  • 3 c. Water
  • 1 Tbsp. Allspice
  • 1 Tbsp. Whole cloves
  • 1 lrg Stick cinnamon
  • 1 c. Vinegar Cantaloupe rind

Direcciones

  1. Select melons that are slightly under ripe. Remove rind and all soft portion. Cut in pcs suitable for serving. Cover with a brine made by dissolving 4 Tbsp. salt in 1 qt water. Let stand 3 hrs. Drain.
  2. Rinse in cool water. Add in rind to sirup made of remaining ingredients.
  3. There should be sufficient sirup to cover rind. Boil 10 min. Let stand overnight. Boil slowly till rind is clear.
