Cantuccini with dates and thyme

Aromatic, dry and crunchy biscuits with no added sugar that ideally complement a cup of coffee or tea. Also, great nibbles to put into the school lunch box.

Ingredientes

  • 100 g whole wheat flour
  • 100 g buckwheat flour
  • 1 tsp baking soda
  • 50 g dates, pitted and chopped into small pieces
  • 25 g walnuts, coarsely chopped
  • 50 g almonds, toasted
  • 50 g chocolate with at least 70% cocoa parts, torn into small pieces
  • 2 eggs
  • 1 tbs dried thyme
  • 2 tbs rum

Direcciones

1. Mix and combine all the ingredients, knead the smooth dough. Shape the dough into a roll, flatten slightly and bake in the oven at 170°C for about 25 minutes.
2. Leave the baked roll to cool slightly, then cut into 1 inch slices.
3. Arrange slices on a baking sheet and dry in the switched off oven.
4. Store the cantuccini in a metal box, tightly closed, for up to one week.
