Ingredientes

  • 1 head romaine lettuce, torn into bite-size pcs
  • 1 x green bell pepper (capsicum), seeded and diced
  • 1 x red bell pepper (capsicum), seeded and diced
  • 1/2 c. (125 ml) dry cranberries
  • 1/2 c. (125 ml) shelled pistachios
  • 1/4 c. (60 ml) extra-virgin extra virgin olive oil
  • 3 Tbsp. (45 ml) red wine vinegar
  • 1 tsp (5 ml) Dijon-style mustard Salt and freshly grnd pepper to taste

Direcciones

  1. Combine the romaine, peppers, cranberries, and pistachios in a large bowl. Whisk together the remaining ingredients and toss with the lettuce mix.
  2. Serves 6 to 8.
