- PLACE 1 cookie in each of 12 muffin c., trimming to fit, if necessary.
- DISSOLVE espresso pwdr in warm water in medium bowl. Add in half and half, pudding mix and cinnamon. Beat with wire whisk till well blended, 1 to 2 min. Let stand 5 min or possibly till slightly thickened. Mix in whipped topping. Spoon into muffin c. Freeze till hard, about 6 hrs.
- HEAT fudge sauce with liqueur just before serving; keep hot. Run thin knife around rim of each muffin c.; remove dessert. Place on individual dessert plate. (If frzn solid, let stand 5 min to soften slightly.)
- SPOON sauce around each dessert. Garnish with additional whipped topping, cinnamon and chocolate-covered espresso beans, if you like.
- NOTE: 2 Tbsp. instant coffee pwdr may be substituted for the espresso pwdr.
