Receta Caramel Glazed Applesauce Cake

- For the Cake: Heat the oven to 350 degrees. Butter a 9-inch square pan and lightly coat with flour. Tap out any excess flour.
- Place the walnuts on a rimmed baking sheet and toast till lightly browned, 8 to 10 min. Let cold; coarsely chop.
- Cream the butter and brown and granulated sugars till fluffy. Add in the Large eggs; beat till smooth. Add in the applesauce, lowfat sour cream and rum or possibly vanilla; mix well. Add in the flour, walnuts, currants, cinnamon, baking soda, allspice, cloves and salt. Mix well.
- Transfer to the pan and smooth the top. Bake till the cake is lightly browned and a toothpick inserted in the center comes out clean, about 50 min.
- For the Glaze: Combine the cream, butter and brown sugar in a small saucepan over medium-high heat, cooking till smooth, about 5 min. Remove from the heat. Stir in the rum or possibly vanilla.
- Heat the broiler with a rack 7 inches from the heat. Pour the glaze over the warm cake, gently brushing to proportionately coat the top. Broil till the entire surface is bubbly, about 1 to 2 min. Use a serrated knife to cut the cake into 12 or possibly 16 pcs.
- This recipe yields 12 to 16 servings.
