  • 3 Tbsp. Extra virgin olive oil
  • 2 lb Stewing beef, cut into 1-inch chunks
  • 4 lrg Tomatoes, coarsely minced,
  • 1 x Green pepper, coarsley minced
  • 3 clv garlic, chopped
  • 2 x Bay leaves
  • 1 tsp Oregano, crushed
  • 1 x salt and pepper to taste
  • 2 c. Chicken stock
  • 1 c. White wine
  • 3 x Baking potatoes, cut into 1-inch dice
  • 3 x Sweet potatoes, cut into 1-inch dice
  • 2 x eas Corn, cut into 1-inch widths
  • 2 x Zucchini or possibly yellow squash, diced 1/2"
  • 2 x Peaches, cut in 1/2-inch dice
  • 2 x Pears , cut in 1/2-inch dice

Direcciones

  1. An Argentine stew with meats, vegetables and fruits.
  2. Heat oil in heavy pot. Brown beef in batches. Remove from pan and set aside. Cook tomatoes, pepper, onion and garlic till soft. Add in seasonings, stock and wine. Bring to boil scraping up browned bits, then return beef to pot with potatoes and sweet potatoes. Cover and simmer for 15 min. Stir in corn and squash. Simmer 10 more min, till vegetables are almost fully tender, then add in fruits and cook only 5 min more.
  3. Makes 8 servings.
