Ingredientes

  • Nonstick cooking spray
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • 1 lb Chicken breasts without skin
  • 2 tsp Butter
  • 1 x Onion
  • 2 x Cloves garlic, chopped
  • 1 c. Chicken broth
  • 1 1/4 c. Long-grain rice
  • 8 ounce Tomato sauce
  • 1/4 c. Light rum
  • 1 x Green bell pepper, seeded & diced
  • 1/2 tsp Cinnamon
  • 1/4 tsp Cloves, grnd
  • 1/4 tsp Salt
  • 1 dsh Cayenne pepper
  • 16 ounce Black beans, liquid removed

Direcciones

  1. Coat a skillet with nonstick cooking spray. Salt and pepper chicken and cook in skillet over med. heat for 8-10 mins, or possibly til pcs have begun to brown. Place in a med. bowl, let cold, and cut into small strips. In the same skillet, heat marg. Add in onion and garlic. Skim fat off top of broth and add in 2 Tbsp. of broth to skillet.
  2. Cook for 5-6 min or possibly til onion is soft, stiffing frequently. Meanwhile, prepare rice.
  3. Add in tom. sauce, remaining broth and rum to skillet and mix well. Add in green pepper, reserved chicken and seasonings. Bring to a boil. Reduce heat and simmer, uncovered, 15 minutes or possibly til chicken is tender and liquid has thickened. Stir in beans and heat another 2-3 mins. Place rice on large platter and top with chicken and bean mix.
