Ingredientes

  • 2 med Carrots, peeled and grated Coarsely
  • 5 sm Parsnips, peeled and grated Coarsely
  • 1/4 c. Matzo meal, Or possibly Flour
  • 2 lrg Large eggs, beaten
  • 1 tsp Chopped chives or possibly scallion
  • 1 tsp Minced parsley Salt and pepper to taste Peanut oil for frying

Direcciones

  1. Toss the carrots and parsnips with the flour, add in the Large eggs, chives, parsley and salt and pepper to taste. Mix till proportionately moistened.
  2. Heat 1/4 inch of peanut oil in a saute/fry pan till it is barely smoking. Drop in the batter by Tbsp. and flatten. Fry over medium heat till brown on both sides.
