- 7 tablespoons unsalted butter, melted
- 1/2 cup packed brown sugar
- 1/4 cup white sugar
- 1 egg yolk
- 3/4 cup flour

%3C/p%3E%3Cp%3EWhat%20we're%20talking%20about%20today%20is%20carrots.%20Well,%20really%20what%20we're%20talking%20about%20is%20carrot%20cake%20cookies,%20but%20that's%20only%20because%20I'm%20slightly%20crazy.%3C/p%3E%3Cp%3ESeriously:%20Am%20I%20the%20only%20person%20that%20gleefully%20plans%20and%20plants%20a%20huge%20garden%20full%20of%20vegetables,%20only%20to%20find%20at%20harvest%20time%20that%20I'm%20trying%20to%20turn%20them%20into%20baked%20goods%20instead%20of%20savory%20side%20dishes?%3C/p%3E%3Cp%3ECrap:%20I%20finally%20may%20be%20developing%20a%20sweet%20tooth%20after%20all.%3C/p%3E%3Cp%3EEven%20though%20we%20have%20had%20two%20pretty%20significant%20frosts%20already%20here%20in%20Vermont,%20I'm%20still%20getting%20a%20few%20things%20from%20the%20garden.%20I%20have%20a%20little%20bit%20of%20kale,%20which%20I%20had%20better%20hurry%20up%20and%20harvest%20before%20the%20deer%20find%20it%20(bastards!),%20and%20carrots.%3C/p%3E%3Cp%3EThis%20year%20marked%20my%20first%20attempt%20at%20growing%20carrots:%20It%20was%20a%20success!%20It's%20so%20rewarding%20to%20see%20the%20little%20orange%20tippity%20top%20of%20a%20carrot%20poking%20through%20the%20ground%20and%20then%20to%20pull%20it%20up.%20Gasp!%20It's%20a%20real%20carrot!%20That%20I%20grew!%3C/p%3E%3Cp%3E(It's%20the%20little%20things,%20really.)%3C/p%3E%3Cp%3EThe%20fun%20and%20wonder%20begins%20to%20wear%20off%20as%20you%20pull%20up%20carrot%20after%20carrot%20after%20carrot.%20And%20realize%20that%20you%20don't%20particularly%20like%20cooked%20carrots.%3C/p%3E%3Cp%3EUh%20oh.%3C/p%3E%3Cp%3EEnter%20the%20shredder!%20After%20harvesting%20about%20half%20my%20carrot%20patch%20(is%20it%20a%20patch?%20do%20carrots%20grow%20in%20patches?),%20I%20washed%20them,%20peeled%20them%20and%20ran%20them%20through%20my%20Kitchen%20Aid%20shredder%20attachment%20(I%20freakin'%20LOVE%20these%20attachments!).%20Just%20as%20I%20do%20with%20zucchini,%20I%20bagged%20them%20into%201-cup%20portions%20and%20popped%20them%20in%20the%20freezer.%20They%20will%20be%20a%20welcome,%20colorful%20addition%20to%20breads,%20meatloaf%20and%20sauces%20throughout%20the%20winter.%3C/p%3E%3Cp%3EBut%20I%20kept%20some%20aside%20to%20make%20these%20carrot%20cake%20cookies.%20Yeah%20--%20'cause%20that's%20how%20ninjas%20roll.%20Slip%20a%20ton%20of%20veg%20into%20a%20batch%20of%20cookies:%20I%20don't%20call%20this%20%22stealthy%20homemaking%22%20for%20nothing,%20friends.%3C/p%3E%3Cp%3ECarrot%20Cake%20Cookies%20(adapted%20from%20Martha%20Stewart)%3C/p%3E%3Cp%3EThese%20cookies%20are%20a%20bit%20reminiscent%20of%20hermits.%20Feel%20free%20to%20substitute%20dried%20cranberries%20for%20the%20raisins,%20if%20you%20prefer.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl,%20stir%20together%20the%20butter,%20both%20sugars%20and%20yolk.%20In%20another%20bowl,%20combine%20the%20flour,%20ginger%20and%20salt.%20Add%20the%20wet%20to%20the%20dry%20and%20stir%20until%20blended,%20then%20mix%20in%20the%20carrots,%20oats%20and%20raisins.%3C/p%3E%3Cp%3ESpoon%20the%20dough%20onto%20parchment-lined%20baking%20sheets%20(I%20use%20a%201%201/2%20tablespoon%20scoop).%20They%20do%20spread,%20so%20give%20them%20a%20little%20space.%20Bake%20for%20about%2017-20%20minutes%20or%20until%20the%20edges%20begin%20to%20brown.%20Let%20the%20cookies%20cool%20for%20a%20few%20minutes%20on%20the%20sheets%20before%20transferring%20them%20to%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E){kind=link}
