.While%20browsing%20I%20saw%20several%20carrot%20and%20cardamom%20soup%20recipes%20and%20decided%20to%20make%20a%20simple%20carrot%20and%20cardamom%20soup.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EPreparation:%3C/p%3E%3Cp%3EChop%20the%20onions%20finely.Scrape%20and%20chop%20fresh%20ginger%20to%20small%20pieces%20or%20grate/paste%20the%20ginger.Blanch%20whole%20tomatoes,peel%20them%20and%20chop%20them%20to%20obtain%20almost%201/4%20cup.Peel%20and%20chop%20the%20carrots%20into%20bite%20sized%20pieces%20to%20obtain%201.5%20cups%20or%20more.Lightly%20crush%20the%20cardamom%20pods%20and%20then%20peel%20the%20pods%20and%20use%20the%20black%20seeds.I%20used%204%20big%20pods%20of%20cardamom%20as%20I%20liked%20the%20taste,but%20add%20as%20per%20your%20taste.If%20you%20are%20not%20used%20to%20the%20spice%20start%20with%201/2%20tsp%20or%20less.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20pan,add%20crushed%20cardamom%20and%20onions.Saute%20this%20till%20the%20onions%20are%20transparent%20and%20the%20cardamom%20sizzles%20and%20flavours%20the%20oil.Add%20chopped%20carrots,ginger%20and%20tomatoes.Mix%20well%20adding%20a%20little%20salt%20and%20pinch%20of%20pepper.Saute%20for%20a%20few%20minutes%20till%20they%20start%20to%20cook%20and%20the%20raw%20smell%20disappears.Add%20water%20to%20cook%20the%20veggies%20and%20bring%20to%20boil.Reduce%20to%20a%20simmer%20and%20let%20it%20cook%20covered%20for%20about%2015-20%20minutes%20or%20until%20the%20carrots%20are%20well%20cooked.Let%20it%20cool%20.%3C/p%3E%3Cp%3EStrain%20the%20mix%20and%20keep%20aside%20the%20leftover%20liquid%20and%20put%20the%20veggies%20in%20a%20blender.Blend%20to%20obtain%20a%20thick%20puree.Add%20leftover%20liquid%20or%20water%20to%20this%20puree-as%20much%20as%20you%20like-%20to%20obtain%20the%20consistency%20of%20a%20soup.I%20like%20my%20soup%20a%20bit%20thick,but%20still%20had%20to%20add%20a%20considerable%20quantity%20of%20liquid%20to%20it.Also%20on%20keeping%20it%20thickens.Serve%20preferably%20warm%20by%20reheating%20it%20or%20at%20room%20temperature%20garnishing%20with%20fresh%20coriander%20leaves.%3C/p%3E%3Cp%3EInstead%20of%20water%20you%20can%20use%20stock%20or%20coconut%20milk%20which%20also%20increase%20the%20flavour.I%20loved%20the%20combo%20of%20carrot%20,tomato%20and%20cardamom.The%20simple%20soup%20gets%20exotic%20with%20the%20use%20of%20cardamom.I%20added%20just%20a%20pinch%20of%20pepper%20and%20just%20a%20small%20piece%20of%20ginger.These%20are%20completely%20optional%20but%20if%20added%20they%20enhance%20the%20taste.The%20tasty%20exotic%20soup%20is%20on%20way%20to%20CWS:Cardamom%20at%20Priya's.%3C/p%3E){kind=link}
