Carrot Thoran...and Happy Onam wishes in advance to all !!

%3C/p%3E%3Cp%3EThe%20only%20thing%20we%20terribly%20missed%20during%20our%20vacation%20was%20nothing%20but%20home-cooked%20meals.%20Ofcourse%20it%20was%20definitely%20a%20bliss%20to%20be%20away%20from%20the%20kitchen%20for%20a%20while%20and%20enjoy%20free%20continental%20breakfasts%20at%20our%20hotel%20and%20try%20several%20new%20cusinies%20and%20tastes,%20but%20every%20now%20and%20then%20we%20wished%20to%20have%20something%20simple,%20something%20homemade.%20Eating%20from%20Indian%20restaurants%20din't%20help%20us%20much%20either!%3C/p%3E%3Cp%3ESo%20the%20first%20thing%20we%20did%20after%20we%20reached%20home%20was%20to%20prepare%20a%20simple%20yet%20hearty%20breakfast.%20Vermicelli%20Upma%20being%20something%20that%20our%20lil'Appu%20also%20loves,%20we%20prepared%20that%20and%20you%20should%20have%20seen%20how%20the%20little%20guy%20savored%20it,%20scooping%20in%20forkfull%20into%20his%20tiny%20mouth.%20He%20also%20missed%20home-cooked%20and%20familiar%20meals%20I%20guess%20:-)%3C/p%3E%3Cp%3EAnd%20although%20still%20tired%20from%20all%20the%20travel%20we%20decided%20to%20prepare%20a%20decent%20lunch%20and%20thanks%20to%20the%20abundance%20of%20our%20garden%20veggies,%20we%20din't%20have%20to%20run%20out%20to%20the%20store%20to%20buy%20any%20veggies%20and%20there%20was%20some%20Carrots%20in%20the%20fridge%20bought%20from%20the%20store%20a%20while%20ago.%20%20So%20we%20cooked%20Rice%20and%20prepared%20Carrot%20thoran,%20Pulishery%20(seasoned%20buttermilk%20curry),%20Vendakka%20Theeyal%20(lady's%20finger%20/okra%20cooked%20in%20a%20roasted%20coconut%20gravy)%20and%20Achinga%20Payar%20Mezhukuperatty...the%20last%20two%20dishes%20prepared%20using%20homegrown%20veggies.%20I%20wish%20I%20had%20the%20recipes%20for%20all%20these%20dishes%20on%20the%20blog,%20but%20I'm%20working%20on%20getting%20it%20in%20here%20soon.%3C/p%3E%3Cp%3EAppu%20loves%20carrots%20and%20we%20add%20it%20to%20almost%20everything%20he%20eats,%20be%20it%20dosa,%20idli,%20sweet%20or%20savory%20dishes%20and%20lately%20he%20loves%20all%20kinds%20of%20thoran,%20including%20this%20Carrot%20Thoran.%3C/p%3E%3Cp%3EThoran%20is%20nothing%20but%20a%20Malayalee%20version%20of%20veggie%20stir%20fry%20which%20is%20cooked%20until%20the%20veggies%20are%20almost%20roasted%20and%20dry%20and%20finally%20some%20grated%20coconut%20is%20added%20for%20flavour%20and%20texture.%3C/p%3E%3Cp%3ECarrot%20thoran%20is%20a%20staple%20side%20dish%20at%20our%20house.%20I%20find%20grating%20the%20carrots%20easier%20but%20you%20can%20dice%20it%20thinly%20or%20make%20small%20cubes%20and%20prepare%20this%20thoran%20and%20the%20way%20I%20make%20it,%20it%20has%20a%20very%20mild%20hint%20of%20spice%20with%20the%20lovely%20sweetness%20from%20the%20carrots%20and%20onions.%20It%E2%80%99s%20one%20of%20our%20absolute%20favorite%20side%20dishes%20and%20tastes%20just%20great%20when%20eaten%20with%20plain%20white%20rice%20or%20Rotis%20and%20is%20really%20really%20easy%20to%20prepare.%3C/p%3E%3Cp%3EYou%E2%80%99ll%3C/p%3E%3Cp%3Eneed%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20In%20a%20frying%20pan,%20heat%3C/p%3E%3Cp%3Ethe%20oil.%20Temper%20by%20cracking%20the%20mustard%20seeds%20and%20then%20add%20dry%20red%20chillies%20and%3C/p%3E%3Cp%3Ecurry%20leaves.%3C/p%3E%3Cp%3E2.%20Add%20the%20diced%20onions%3C/p%3E%3Cp%3Eand%20green%20chillies,%20add%20some%20salt%20and%20saut%C3%A9%20until%20the%20onions%20are%20pink%20and%20soft.%3C/p%3E%3Cp%3E3.%20Add%20the%20grated%20Carrots%3C/p%3E%3Cp%3Enow%20and%20sprinkle%20a%20tiny%20bit%20of%20water%20and%20cover%20and%20cook%20until%20the%20carrots%20are%3C/p%3E%3Cp%3Esoft%20and%20cooked.%3C/p%3E%3Cp%3E4.%20Coarsely%20grind%20or%3C/p%3E%3Cp%3Ecrush%20using%20a%20mortar-pestle%20the%20coconut%20and%20garlic%20and%20add%20that%20to%20the%20carrot%3C/p%3E%3Cp%3Eand%20cook%20for%20few%20more%20minutes%20without%20the%20lid%20until%20the%20thoran%20is%20dry%20and%20the%3C/p%3E%3Cp%3Egarlic%20smell%20wears%20off.%3C/p%3E%3Cp%3EFew%3C/p%3E%3Cp%3Eother%20suggestions:%3C/p%3E%3Cp%3E1.%20If%20you%20do%20not%20want%20to%3C/p%3E%3Cp%3Ebite%20into%20any%20green%20chillies%20by%20mistake,%20grind/crush%20it%20along%20with%20the%20coconut%3C/p%3E%3Cp%3Eand%20garlic%20in%20Step%204.%3C/p%3E%3Cp%3E2.%20You%20can%20add%20some%3C/p%3E%3Cp%3Echana%20dal%20or%20split%20moong%20dal%20while%20tempering%20for%20some%20more%20flavor%20and%20texture.%3C/p%3E%3Cp%3E3.%20Use%20Vegetable%3C/p%3E%3Cp%3Eoil%20if%20you%20do%20not%20prefer%20coconut%20oil.%3C/p%3E%3Cp%3ESee!%20now%20wasn't%20that%20really%20simple%20and%20easy.%20And%20we%20ate%20lunch%20to%20our%20hearts%20content%20with%20these%20simple%20yet%20yummy%20dishes%20and%20no%20restaurant%20food%20could%20have%20beat%20that,%20I%20say!%3C/p%3E%3Cp%3EOnam%20is%20right%20around%20the%20corner%20(on%20Sep%2016th%20this%20year)%20and%20I'm%20sure%20all%20Keralites%20are%20gearing%20up%20to%20celebrate%20this%20popular%20festival%20of%20the%20south-Indian%20state%20of%20Kerala,%20with%20family%20&%20friends%20and%20the%20special%20
